High Protein Chicken Taco Soup
A rich, comforting, and incredibly easy High Protein Chicken Taco Soup packed with shredded chicken, black beans, and a creamy, spiced broth that keeps you full for hours.
- Low and slow simmering prevents the chicken breast from drying out, keeping the meat incredibly tender.
- Cream cheese acts as a natural emulsifier, binding the acidic tomatoes and chicken broth into a cohesive, velvety soup base.
- Spicing the broth directly in hot fat before adding liquid coaxes out the oil-soluble flavor compounds in the chili powder and cumin.
Last November, after dragging my damp, freezing self home from a disastrous grocery run where I dropped a jar of expensive salsa in the parking lot, I wanted nothing more than a bowl of hot soup that didn't feel like sad dishwater.
I stood over my stove, hands still stiff from the cold, and aggressively hacked open three different cans of beans with a dull manual opener that always pinches my palm.
Most taco soups fail because they are just watery broth and dry meat.
Think about this in terms of physics: boiling lean chicken breast rapidly causes the protein fibers to contract violently, squeezing out every drop of moisture into a broth that lacks the fat structure to hold onto flavor.
The simple fix is a gentle simmer combined with a touch of cream cheese to emulsify the liquid, creating a velvety protein matrix that clings to every single shred of chicken.
It is hands down the easiest way to hit your daily goals.
If you are looking for more high protein recipes that burn fat without sacrificing flavor, this soup is a fantastic addition to your weekly rotation.

Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 1 tbsp taco seasoning
- 1 tsp Diamond Crystal kosher salt
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) pinto beans, rinsed and drained
- 1 cup frozen corn kernels
- 2 cups low-sodium chicken broth
- 4 oz light cream cheese, cubed
Directions
- Heat the olive oil in a large Dutch oven over medium heat. Add the diced onion and cook until soft and translucent, about 5 minutes.
- Stir in the minced garlic, taco seasoning, and Diamond Crystal kosher salt. Toast the spices for 1 minute until fragrant to release the oil-soluble flavor compounds.
- Pour in the diced tomatoes, black beans, pinto beans, corn, and chicken broth. Stir well to combine and scrape up any browned bits from the bottom of the pot.
- Submerge the raw chicken breasts directly into the liquid. Bring the soup to a gentle simmer, then reduce the heat to low. Cover and cook for 15 to 20 minutes, or until the chicken registers 165°F on an instant-read thermometer.
- Fish the chicken breasts out of the pot and transfer them to a cutting board. Use two forks to shred the meat into bite-sized pieces, then return the shredded chicken to the pot.
- Turn the heat to low. Stir in the cubed cream cheese, whisking gently until it completely melts and emulsifies into the broth, turning it beautifully creamy. Serve hot with your favorite toppings.
Notes
- I highly recommend using Diamond Crystal kosher salt. If you only have standard Morton's table salt, cut the measurement in half (use 1/2 teaspoon instead of 1 teaspoon) to prevent an absolute salt bomb.
- Toasting your spices in the hot oil before adding any liquid is crucial because cumin and chili powder contain oil-soluble flavor compounds that won't fully wake up in plain water.
- Do not let the soup boil rapidly after adding the cream cheese. High heat will cause the dairy proteins to clump and separate, leaving you with a grainy, broken broth instead of a silky emulsion.
- After a day in the fridge, the starches from the beans will naturally thicken the broth. If it looks a bit too thick when reheating, simply splash in a tablespoon of water or chicken broth to loosen it up.
Serving Suggestions
This soup is a complete meal on its own, but you can easily turn it into a feast with the right crunchy, creamy accompaniments.
- A side of warm Southern-Style Honey Butter Cornbread Poppers to soak up every last drop of the creamy broth.
- Freshly sliced avocado or a dollop of Greek yogurt for an extra hit of healthy fats and protein.
- A handful of crushed tortilla chips to add a satisfying, salty crunch to every spoonful.
- A squeeze of fresh lime juice right before serving to cut through the richness of the cream cheese.
- Pair it alongside these crispy Chicken Avocado Ranch Burritos for a high-protein Mexican-inspired spread.
Storage and Reheating
Store leftovers in an airtight container for up to four days.
If you want to freeze this soup, I highly recommend leaving the cream cheese out during the initial cook because dairy has an annoying habit of separating and turning grainy once thawed.
To reheat, gently warm it in a saucepan over medium-low heat while stirring frequently.
Ingredient Substitutes
If you find yourself missing a few pantry staples, don't panic. Here are the easiest swaps that won't ruin your dinner:
- Chicken Breasts: You can easily swap in boneless chicken thighs or even shredded rotisserie chicken to save time.
- Black Beans: Pinto beans, kidney beans, or even great northern beans work beautifully in this hearty base.
- Cream Cheese: If you want to keep things lighter, swap the cream cheese for Greek yogurt or blended cottage cheese, but stir it in off the heat to prevent curdling.
- Taco Seasoning: Make your own quick blend using equal parts chili powder, ground cumin, garlic powder, and a pinch of dried oregano.
At the end of a long, exhausting day, there is something deeply therapeutic about watching a pot of soup come together with minimal effort. It is warm, it is incredibly filling, and it proves that eating healthy, high-protein meals never has to taste like a chore.
