- 1 tbsp green onions, sliced (for garnish)
- 1 tsp sesame seeds (for garnish)
Directions
- Pat the shrimp completely dry with paper towels to ensure a proper sear.
- Season the shrimp evenly with Diamond Crystal kosher salt and black pepper.
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Add the shrimp to the skillet in a single layer and sear for 1 to 2 minutes per side until pink, then immediately transfer them to a plate.
- Lower the heat to medium and add the honey, soy sauce, minced garlic, and grated ginger to the empty skillet.
- Simmer the sauce for 2 minutes, stirring constantly, until it bubbles and thickens into a glossy glaze.
- Return the shrimp and any accumulated juices to the skillet, tossing them quickly to coat in the warm glaze.
- Garnish with sliced green onions and sesame seeds, then serve immediately. </
Notes
- I highly recommend using Diamond Crystal kosher salt; if you only have Morton's kosher salt or fine table salt, cut the measurement in half (use 1/4 tsp instead of 1/2 tsp) to avoid over-salting.
- Patting the shrimp completely dry is non-negotiable because surface moisture creates steam, which lowers the pan's temperature and prevents the Maillard reaction from creating those savory, caramelized edges.
- Have your honey, soy sauce, garlic, and ginger measured and mixed in a small bowl before you turn on the stove, as garlic burns in a matter of seconds in a hot pan if you are scrambling to find ingredients.
