Ingredients

  • 4 large flour tortillas (10-inch, preferably Mission brand)
  • 8 oz cream cheese, softened (224g)
  • 1 tsp Diamond Crystal kosher salt (3g)
  • 1 tbsp fresh dill, finely chopped
  • 1 tbsp fresh chives, finely chopped
  • 1/2 tsp garlic powder
  • 1/2 lb deli turkey breast, thinly sliced (225g)
  • 8 slices provolone cheese
  • 1 cup fresh baby spinach, thoroughly dried
  • 1/2 cup roasted red peppers, patted completely dry and sliced

Directions

  1. In a medium bowl, vigorously whip the softened cream cheese, Diamond Crystal kosher salt, dill, chives, and garlic powder with a spatula until smooth and spreadable.
  2. Lay the tortillas flat on a clean work surface and spread an even layer of the herbed cream cheese across the entire surface of each, going all the way to the edges to act as a moisture barrier.
  3. Layer the provolone cheese slices in the center of each tortilla, followed by the thinly sliced deli turkey.
  4. Scatter the thoroughly dried baby spinach and roasted red peppers evenly over the turkey layer.
  5. Roll each tortilla up tightly, starting from the bottom edge, pressing down firmly with the flats of your hands to ensure a tight, compact roll.
  6. Wrap each roll tightly in plastic wrap and refrigerate for at least 2 hours (or overnight) to allow the cream cheese to firm up and lock the structure.
  7. Unwrap the rolls and use a very sharp serrated knife to slice off the uneven ends, then cut the rolls into 1-inch thick pinwheels.

Notes

  • Salt Conversion: Always use Diamond Crystal Kosher Salt. If using Morton's kosher salt or fine table salt, cut the volume in half (use 1/2 tsp instead of 1 tsp) to avoid over-salting.
  • The Hydrophobic Barrier: Spreading the cream cheese all the way to the very edge of the tortilla is scientifically crucial. The fat in the cream cheese acts as a hydrophobic barrier, preventing the water molecules in the spinach and turkey from migrating into the flour tortilla and making it soggy.
  • The Moisture Warning: Do not skip drying your spinach and roasted red peppers. Even a few drops of residual washing water will compromise the cream cheese seal, causing the pinwheels to slip apart when sliced.
  • Storage Behavior: After 24 hours in the fridge, the tortillas will naturally absorb a tiny amount of ambient moisture, making them slightly softer but still structurally sound. Do not freeze these, as the emulsion in the cream cheese will break upon thawing, resulting in a watery mess.
