Homemade Brookies
The ultimate dessert mashup featuring a rich, fudgy chocolate brownie base topped with a chewy, golden chocolate chip cookie layer.
- Melted butter in the brownie base ensures a dense, fudgy texture rather than a cakey one.
- Chilling the cookie dough prevents the cookies from spreading too quickly and sinking into the brownie layer.
- A touch of cornstarch in the cookie dough keeps the cookie layer soft and chewy even after baking.
I still remember the sweltering July afternoon I tried to bake these for my sister’s college graduation in a cramped third-floor apartment with a broken air conditioner.
It was a total disaster.
The physics of baking two completely different batter densities in one pan is surprisingly tricky, which is why most recipes fail. If your brownie base is too wet, or your cookie dough is too heavy, the cookie layer simply sinks to the bottom, creating a dense, gummy layer of sadness. I tested this with cheap store-brand cocoa powder, and it failed every single test because the low fat content left the brownies chalky and dry.
By chilling the cookie dough balls before pressing them on top, you create a thermal barrier that keeps them afloat.
Trust me on this one, you probably already have everything you need in your pantry. They are hands down spectacular.

Ingredients
- 1/2 cup (113g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/3 cup (35g) unsweetened cocoa powder
- 1/2 cup (60g) all-purpose flour
- 1/4 tsp Diamond Crystal kosher salt (approx. 1.5g)
- 1/2 cup (113g) unsalted butter, softened
- 1/2 cup (100g) packed light brown sugar
- 1/4 cup (50g) granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/4 cups (150g) all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp Diamond Crystal kosher salt (approx. 3g)
- 1 cup (170g) semi-sweet chocolate chips
Directions
- Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a medium bowl, whisk the melted butter and granulated sugar together until well combined, then beat in the eggs and vanilla extract until the mixture is glossy and slightly pale.
- Sift in the cocoa powder, flour, and salt, then fold gently with a spatula until just combined to keep the brownie layer dense and fudgy. Spread this batter evenly into the bottom of your prepared pan.
- In a separate bowl, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy, then beat in the egg and vanilla extract.
- Stir in the flour, baking soda, and salt until a soft dough forms, then fold in the chocolate chips.
- Scoop flattened clumps of the cookie dough and place them gently on top of the brownie batter, covering as much of the surface as possible.
- Bake for 30 to 35 minutes until the cookie top is golden brown and a toothpick inserted into the center comes out with a few moist crumbs. Let cool completely before slicing.
Notes
- We highly recommend using Diamond Crystal Kosher Salt; if you are using Morton's kosher salt or fine table salt, cut the volume measurement in half (e.g., use 1/8 tsp instead of 1/4 tsp).
- Melted butter is crucial for the brownie layer because it limits gluten development, ensuring a dense, fudgy crumb rather than a cakey texture.
- Do not overbake! The brookies will continue to set as they cool in the hot pan. Pull them out when the cookie top is golden but the center still has a slight, soft wobble.
- After a day in the fridge, the fudgy brownie layer becomes incredibly chewy and dense, making them taste even better than they do fresh out of the oven.
Serving Suggestions
These decadent bars are incredibly rich on their own, but you can easily turn them into a showstopping dessert with a few simple additions.
- Serve warm with a generous scoop of vanilla bean ice cream melting over the top.
- Drizzle with warm salted caramel sauce or hot fudge for an extra layer of indulgence.
- Pair with a tall, ice-cold glass of whole milk to balance the rich chocolate flavors.
- Cut into tiny, bite-sized squares and arrange them on a dessert platter for parties.
- Enjoy alongside a hot espresso or a bitter dark roast coffee to cut through the sweetness.
Storage and Reheating
Store these beauties in an airtight container at room temperature for up to three days. To keep them ultra-soft, toss a slice of plain white bread into the container with them.
It works like magic.
If you want them to last longer, wrap individual squares tightly in plastic wrap and freeze them for up to three months.
When the craving strikes, reheat a single brookie in the microwave for 15 to 20 seconds. This melts the chocolate chips and restores that fresh-out-of-the-oven, gooey texture.
Ingredient Substitutes
If you need to adapt this recipe for dietary restrictions or pantry limitations, here are a few reliable swaps:
- Gluten-Free Flour: You can substitute the all-purpose flour with a high-quality 1:1 gluten-free baking blend in both layers.
- Coconut Sugar: Swap the brown and white sugars in the cookie layer for coconut sugar for a slightly caramelized, less refined sweetness.
- Coconut Oil: Use refined coconut oil in the brownie layer instead of butter for a dairy-free fat option.
I hope these bring a little bit of chocolate-induced joy to your kitchen, even if your hand mixer is old and tired like mine.
