  • 60 g unsalted butter, melted
  • 120 ml Frank's RedHot Original Cayenne Pepper Sauce
  • 1 tbsp honey

Directions

  1. Preheat your oven to 120°C (250°F). Line a large rimmed baking sheet with aluminum foil and place a wire cooling rack inside.
  2. In a large bowl, toss the thoroughly dried chicken wings with the baking powder, Diamond Crystal kosher salt, and black pepper until evenly coated.
  3. Arrange the wings on the wire rack in a single layer, leaving space between each piece so the hot air can circulate freely.
  4. Bake on the lower-middle oven rack for 30 minutes to render out the fat slowly.
  5. Increase the oven temperature to 220°C (425°F) and move the baking sheet to the upper-middle rack, baking for another 40 to 50 minutes until the wings are golden brown and shatteringly crisp.
  6. While the wings bake, whisk together the melted butter, Frank's RedHot sauce, and honey in a large bowl.
  7. Remove the wings from the oven, tap the tongs against your hip to shake off any excess fat, and immediately toss them in the buffalo sauce until fully coated.

Notes

  • Brand Conversion: Always use Diamond Crystal kosher salt; if you only have Morton's or fine table salt, cut the volume in half (use 1.5 teaspoons instead of 1 tablespoon) to avoid an inedible salt bomb.
  • Science Rationale: Ensure you use baking powder, not baking soda. Baking soda will leave a metallic, soapy taste on the skin, whereas baking powder reacts with the meat's proteins to create the desired micro-blisters.
