  • 250g low-moisture mozzarella cheese, shredded
  • 200g pizza sauce

Directions

  1. In a large bowl, whisk together the bread flour, instant yeast, and Diamond Crystal kosher salt.
  2. Pour in the warm water and 15g of olive oil, stirring with a wooden spoon until a sticky dough forms.
  3. Drizzle 15g of olive oil onto your sheet pan, using your hands to coat the entire surface and sides.
  4. Transfer the dough to the prepared pan, turning it once to coat it in oil, then gently press it out with your fingertips.
  5. Let the dough rest covered for 1 hour, then press it to the edges of the pan using your fingertips to create dimples.
  6. Preheat your oven to 450°F (230°C). Let the dough rise for another 30 minutes until puffy.
  7. Spread the pizza sauce evenly over the dough, leaving a small border, then top with shredded mozzarella.
  8. Bake for 15 minutes until the cheese is bubbly and the bottom crust is deeply golden and crispy.

Notes

  • We highly recommend Diamond Crystal kosher salt; if you only have Morton, reduce the volume by half (use 1.5 teaspoons instead of 1 tablespoon) to avoid an overly salty crust.
  • Bread flour is essential here because its high protein content (around 12-14%) creates a strong gluten matrix, allowing the dough to hold onto fermentation gases for an airy, chewy texture.
  • Keep a close eye on your oven during the last 3 minutes of baking; high-moisture toppings can release water and delay browning, but sugar-heavy sauces will burn quickly if left unattended.
