Directions
- Preheat your oven to 375°F (190°C) and generously grease a 24-cup mini muffin pan with nonstick spray or melted butter.
- In a large bowl, whisk together the flour, fine-grind yellow cornmeal, sugar, baking powder, and kosher salt.
- In a separate bowl, whisk the buttermilk, melted butter, eggs, and honey until smooth.
- Pour the wet ingredients into the dry ingredients and fold gently with a spatula just until combined; do not overmix.
- Divide the batter evenly among the mini muffin cups, filling each about three-quarters full.
- Bake for 11 to 13 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.
