Directions

  1. In a medium bowl, whisk together the honey, 2 tablespoons of lime juice, Diamond Crystal kosher salt, garlic powder, and olive oil to create the marinade.
  2. Toss the diced chicken breasts in the marinade, ensuring every piece is coated, and let sit for 10 minutes.
  3. Heat a large skillet over medium-high heat and cook the chicken for 6 to 8 minutes until golden brown and cooked through, then set aside.
  4. In a separate bowl, mash the ripe avocados with the remaining lime juice and chopped cilantro until chunky but spreadable.
  5. Place a 3-inch metal ring mold or clean tin can on a plate, then pack 1 cup of warm jasmine rice firmly into the bottom using the flat of your palm.
  6. Spread half of the mashed avocado over the rice layer, then top with half of the cooked glazed chicken.
  7. Gently lift the mold straight up to reveal the stack, repeat for the second plate, and serve immediately.
