- 1 cup (200g) granulated sugar
- 1/4 cup (60ml) light corn syrup
- 1/4 cup (60ml) water
- 1 tablespoon baking soda (sifted)
- 1/4 teaspoon Diamond Crystal kosher salt
- 1 teaspoon pure vanilla extract
Directions
- Line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides. Do not grease the paper.
- In a heavy-bottomed medium saucepan, combine the granulated sugar, light corn syrup, water, and salt. Stir gently just to wet the sugar, being careful not to splash sugar crystals onto the sides of the pan.
- Clip a candy thermometer to the side of the pan, ensuring the bulb is submerged in the liquid but not touching the bottom of the pan. Heat over medium-high heat without stirring.
- Let the mixture boil until it reaches exactly 300°F (149°C). This will take about 8 to 10 minutes. Watch it closely as it nears the end; the color will turn a light golden amber.
- Immediately remove the pan from the heat. Stir in the vanilla extract, then quickly dump in the sifted baking soda. Whisk vigorously for exactly 3 to 5 seconds until the mixture foams up violently.
- Instantly pour the foaming mixture into the prepared pan. Do not spread, smooth, or touch the foam, as this will pop the carbon dioxide bubbles and deflate your candy.
- Let the honeycomb cool completely at room temperature for at least 2 hours. Once hardened, lift it out using the parchment paper and crack it into bite-sized pieces using the back of a heavy spoon or your hands. </
Notes
- We highly recommend using Diamond Crystal kosher salt; if you are using Morton's kosher salt or fine table salt, cut the volume in half (use 1/8 teaspoon instead of 1/4 teaspoon).
- The baking soda undergoes thermal decomposition when exposed to the 300°F syrup, releasing carbon dioxide gas which creates the signature airy, pocketed structure of the sponge candy.
- Do not walk away from the stove once the temperature passes 280°F. Sugar burns in a matter of seconds, and a burnt syrup will ruin the entire batch with a bitter, acrid taste.
- Honeycomb is extremely hygroscopic, meaning it greedily absorbs moisture from the air. Store it in an airtight container immediately after cracking, or it will turn sticky and melt within hours on a humid day.
