Ingredients

  • 2 cups cooked chicken, shredded
  • 1/2 cup barbecue sauce (thick style)
  • 3 tbsp hot honey
  • 2 cups low-moisture shredded mozzarella cheese
  • 4 large flour tortillas (burrito size)
  • 1 tbsp unsalted butter
  • 1/2 tsp Diamond Crystal kosher salt
  • 1/4 cup fresh cilantro, chopped (optional)

Directions

  1. In a medium bowl, combine the shredded chicken, barbecue sauce, hot honey, and Diamond Crystal kosher salt. Stir until the chicken is fully coated in the sweet, spicy sauce.
  2. Place a large cast-iron skillet over medium heat. Let it preheat for a solid 3 minutes to ensure even heat distribution.
  3. Lay a flour tortilla flat on a clean work surface. Sprinkle 1/4 cup of shredded mozzarella over one half of the tortilla.
  4. Spoon a quarter of the BBQ chicken mixture over the cheese layer. Top the chicken with another 1/4 cup of mozzarella, then fold the empty half of the tortilla over the filling to create a half-moon shape.
  5. Melt a small pat of butter in the preheated skillet. Carefully place the folded quesadilla into the pan.
  6. Cook for 3 to 4 minutes until the bottom is deep golden brown and crispy. Carefully flip the quesadilla using a wide spatula and cook for another 3 minutes until the cheese is fully melted and the second side is crispy.
  7. Transfer the quesadilla to a cutting board. Let it rest for 2 minutes before slicing into wedges to allow the cheese matrix to set. Repeat with the remaining quesadillas.

Notes

  • I highly recommend using Mike's Hot Honey for this recipe. If you don't have it, you can substitute with 3 tablespoons of standard honey mixed with 1/2 teaspoon of cayenne pepper.
  • Low-moisture mozzarella is non-negotiable here. Fresh mozzarella contains too much water, which will release during cooking and ruin the crispy protein matrix of the toasted tortilla.
  • Keep your heat strictly at medium or medium-low. Because of the high sugar content in both the BBQ sauce and the hot honey, these quesadillas will burn in a heartbeat if your pan is too hot.
  • Leftovers store decently in the fridge for up to 3 days, but the tortilla will lose its signature crunch as it absorbs moisture from the chicken. Always reheat in a dry skillet or air fryer rather than the microwave to restore the crispiness.
