- 1 lb (450g) pizza dough, room temperature
- 1/2 cup pizza sauce
- 1.5 cups low-moisture, whole-milk mozzarella cheese, shredded
- 1/4 cup freshly grated Parmesan cheese
- 1/4 cup cup-and-char pepperoni slices
- 2 tbsp hot honey, for drizzling
- 1 tsp Diamond Crystal kosher salt
- 1 tbsp olive oil, for the pan
Directions
- Place your cast iron skillet on the middle rack of your oven and preheat to 500°F (260°C) for at least 30 minutes to build up thermal mass.
- On a lightly floured surface, gently stretch your room-temperature dough into a 12-inch circle, being careful not to pop the air bubbles along the edge.
- Carefully remove the hot skillet from the oven using heavy-duty mitts, drizzle with olive oil, and lay the stretched dough inside, pressing it slightly up the sides.
- Quickly spread the pizza sauce over the dough, leaving a 1/2-inch border, then sprinkle with Diamond Crystal kosher salt, mozzarella, Parmesan, and pepperoni.
- Return the skillet to the oven and bake for 12 to 15 minutes, or until the crust is deeply golden brown and the cheese is bubbling and charred in spots.
- Remove from the oven, immediately drizzle with the hot honey, slice, and serve hot.
Notes
- I highly recommend using Diamond Crystal kosher salt; if you are using Morton's or fine table salt, cut the volume by half (use 1/2 tsp instead of 1 tsp) to avoid an over-salted crust.
- Always choose low-moisture, whole-milk mozzarella over fresh mozzarella in a high-heat home oven. Fresh mozzarella contains too much water, which vaporizes during baking and pools on top, ruining the protein matrix of the melting cheese and making your crust soggy.
- Keep a close eye on the pizza during the last 3 minutes of baking. The sugars in the sauce and dough can transition from beautifully caramelized to completely charred very quickly at 500°F.
- Leftover slices will lose their signature crispiness after a day in the fridge as the crust absorbs moisture from the sauce. To revive it, reheat the slices in a dry skillet over medium heat for 3 minutes before popping them under the broiler.
