Hot Honey Strawberry Bourbon Smash

A refreshing, fiery twist on a classic cocktail featuring ripe strawberries, bold bourbon, fresh mint, and a kick of spicy hot honey.

Hot Honey Strawberry Bourbon Smash
Why This Recipe Works:
  • Hot honey's capsaicin binds with the oaky vanillin in bourbon, creating a complex, warming finish.
  • Muddling the strawberries directly with the honey draws out their natural juices through osmotic pressure.
  • A splash of fresh lemon juice balances the heavy sweetness, cutting through the rich corn mash of the whiskey.

Last July, during a humid evening that made my kitchen feel like a sauna, I tried making a classic whiskey smash with some sad, underripe strawberries.

It tasted like wet cardboard and cheap bourbon.

Most smash recipes fail because home bartenders simply toss fruit and sweetener into a glass and press down with a cheap plastic muddler until their wrists click.

This lazy bruising doesn't actually extract the oil-soluble flavor compounds locked inside the mint leaves or break down the fibrous strawberry walls.

The secret is using a heavy wooden muddler to actively emulsify the strawberries with a warm, spicy hot honey syrup before the ice even touches the glass.

Bear with me here, because the physics of this drink rely on temperature control; if you add the bourbon and ice too quickly, the hot honey will seize up into sticky, unmixable globs that cling to the bottom of your shaker like stubborn taffy.

Ingredients

  • 3 ripe strawberries, hulled
  • 5 fresh mint leaves
  • 0.75 oz hot honey
  • 2 oz quality bourbon
  • 0.75 oz fresh lemon juice
  • 2 oz club soda, to top
  • Crushed ice

Directions

  1. In a sturdy cocktail shaker, combine the strawberries, mint leaves, and hot honey.
  2. Muddle firmly until the strawberries are completely broken down and the mint is fragrant, but not shredded.
  3. Pour in the bourbon and fresh lemon juice, then fill the shaker with ice.
  4. Shake vigorously for 15 seconds until the outside of the shaker is frosty and cold to the touch.
  5. Double strain the mixture into a rocks glass filled with fresh crushed ice.
  6. Top with club soda, stir gently, and garnish with a fresh strawberry slice and a sprig of slapped mint.

Notes

  • The Honey Brand: I highly recommend Mike's Hot Honey, but if you make your own, use 1 tablespoon (21 grams) of clover honey infused with a pinch of cayenne.
  • The Mint Science: Do not shred your mint leaves; over-muddling tears the plant veins, releasing bitter chlorophyll instead of the sweet, aromatic mint oils.
  • The Seizing Warning: Always mix the hot honey with the room-temperature bourbon and lemon juice before adding ice to prevent the honey from seizing into a solid lump.
  • Storage Behavior: While this cocktail is hands down best served fresh, you can batch-prep the strawberry-honey-lemon mixture a day ahead; just note that the mint will oxidize and turn brown if left in the liquid for more than 4 hours.

Serving Suggestions

Complete your summer happy hour by pairing this fiery, sweet smash with complementary dishes that balance the heat and keep the vibe incredibly fresh.

  • Serve alongside a crisp Watermelon Feta Salad to cool down the palate.
  • Pair with smoky Hot Honey Chicken for a double dose of sweet-heat synergy.
  • Present in a double old-fashioned glass with a dehydrated lemon wheel.
  • Accompany with a cheese board featuring creamy goat cheese and sharp cheddar.

Storage and Reheating

Don't freeze this.

If you are planning a backyard party, you can easily batch the strawberry, hot honey, and lemon juice base up to 24 hours in advance. Keep it tightly sealed in a glass mason jar in the fridge.

Do not add the bourbon, mint, or sparkling water until right before your guests arrive. The mint will turn bitter and the soda will go completely flat.

After a day in the fridge, the strawberry solids will settle to the bottom, so give the jar a vigorous shake before pouring. Fished-out strawberry pulp can also be saved to spoon over vanilla ice cream.

Ingredient Substitutes

If you don't have everything in your pantry, here are some quick swaps that won't ruin your drink.

  1. Bourbon: Swap for rye whiskey if you prefer a spicier, less sweet profile, or use dark rum for a tropical twist.
  2. Hot Honey: Use regular honey mixed with a tiny drop of your favorite hot sauce, or try the glaze from Hot Honey Chicken Bowls.
  3. Strawberries: Blackberries or raspberries work beautifully here; if you have leftovers, use them up in Strawberry Cheesecake Bars with a Creamy, Lush Texture.
  4. Lemon Juice: Fresh lime juice is an excellent alternative, similar to the citrus balance in a Blueberry Pineapple Tequila Sour with a Frothy Twist.

This drink has quickly become my absolute favorite way to survive the summer heat, and I promise it will do the same for you. Grab your shaker, slap that mint, and enjoy a perfectly balanced sip!
