Hummus Flatbread With Sun-Dried Tomatoes Spinach and Pesto
This quick hummus flatbread features rich sun-dried tomatoes, fresh spinach, and zesty pesto on a warm, crispy crust. A perfect 15-minute meal!
- Flash-baking the flatbread first gelatinizes the starches, creating a moisture-resistant barrier.
- Using oil-packed sun-dried tomatoes introduces fat-soluble flavor compounds that cling beautifully to the hummus.
- Adding the fresh spinach at the very end prevents it from releasing excess water and making the crust soggy.
I still remember the humid Tuesday afternoon I burned my collarbone on a blistering cast-iron skillet trying to char a store-bought pocket pita. My forearm was slick with sweat, and the kitchen smelled like scorched cardboard.
It was a total disaster.
The issue with most quick flatbreads is that people treat them like miniature pizzas, piling on heavy, wet ingredients that turn the delicate crust into a soggy, sad sponge. The physics of this is fascinating, but bear with me here: when you spread cold, water-logged hummus onto a thin dough and bake it, the moisture has nowhere to go but down, completely ruining the starch structure.
To fix this, we need to flash-bake the crust first to set the protein matrix before adding any toppings.
Once the base is crisp, we layer warm, savory Sun Dried Tomato Pesto and creamy hummus, finishing with fresh greens that wilt just slightly from the residual heat.

Ingredients
- 2 store-bought flatbreads (or use our Homemade Pizza Dough rolled thin)
- 1/2 cup classic hummus (or try our vibrant Edamame Hummus)
- 1/4 cup Sun Dried Tomato Pesto
- 1/2 cup fresh baby spinach, roughly chopped
- 1/4 cup sun-dried tomatoes in oil, drained and sliced
- 2 tbsp crumbled feta cheese (or substitute with a dollop of Whipped Feta Dip)
- 1/2 tsp Diamond Crystal kosher salt
- 1 tbsp extra virgin olive oil
Directions
- Preheat your oven to 425°F (218°C). If you have a baking stone or steel, place it on the middle rack to heat up.
- Brush both sides of the flatbreads lightly with extra virgin olive oil and sprinkle with a pinch of kosher salt.
- Place the flatbreads directly on the hot baking stone or a baking sheet and bake for 3 to 4 minutes until the edges are golden and crisp.
- Remove the flatbreads from the oven. Carefully spread a thick, even layer of hummus over the warm crust, leaving a half-inch border around the edges.
- Dollop the sun-dried tomato pesto over the hummus, then use the back of a spoon to gently swirl the two together.
- Scatter the chopped baby spinach, sliced sun-dried tomatoes, and crumbled feta cheese evenly over the top.
- Return to the oven for just 1 to 2 minutes, just until the spinach begins to wilt and the feta is warm. Slice and serve immediately.
Notes
- I highly recommend using Diamond Crystal Kosher Salt; if you only have Morton's kosher salt, cut the volume by half (use 1/4 tsp instead of 1/2 tsp) to avoid an over-salted crust.
- The oil-soluble flavor compounds in the sun-dried tomatoes are unlocked when paired with the fats in the pesto, creating a much deeper flavor profile than dry-packed tomatoes can offer.
- Do not walk away while flash-baking the flatbread; because store-bought flatbreads are already cooked, they can go from beautifully crisp to charred and bitter in under thirty seconds.
- Leftover flatbread will lose its crispness in the fridge as the hummus hydrates the crust, but you can easily revive it by reheating it in a dry skillet over medium heat for 3 minutes.
- If you want a sturdier, chewier base, you can adapt this recipe using the crust from our BBQ Chicken Flatbread Pizza.
Serving Suggestions
This flatbread is incredibly versatile and makes a fantastic light lunch or a crowd-pleasing appetizer. Here are a few ways to round out the meal and enhance your dining experience:
- Serve alongside a crisp green salad tossed in a light lemon vinaigrette.
- Pair with a warm bowl of soup for a classic soup-and-sandwich style combo.
- Drizzle with a touch of hot honey or balsamic glaze right before slicing for a sweet-and-savory kick.
- Cut into thin strips and serve as part of a larger Mediterranean mezze platter.
Storage and Reheating
If you happen to have leftovers, store them in an airtight container lined with a paper towel. The paper towel is crucial here because it absorbs any escaping condensation, keeping the crust from turning into mush.
Never use the microwave.
Microwaving will instantly gelatinize the starches in the flatbread, leaving you with a rubbery, sad mess. Instead, heat a heavy cast-iron skillet over medium-low heat.
Place the flatbread directly into the dry pan and cover it with a lid for about three to four minutes. This traps the heat to warm the toppings while the direct contact with the pan crisps the bottom beautifully.
Ingredient Substitutes
Don't have everything in your pantry? No worries. Here are some easy swaps that work beautifully:
- Flatbread: You can easily swap store-bought flatbread for pita bread, naan, or even a thin-crust tortilla.
- Hummus: If you run out of traditional chickpea hummus, a white bean dip or even a creamy avocado spread makes an excellent base.
- Pesto: Traditional basil pesto can be used in place of sun-dried tomato pesto for a brighter, more herbaceous flavor profile.
- Feta Cheese: Goat cheese, fresh mozzarella pearls, or even a sprinkle of parmesan cheese will provide that necessary salty bite.
At the end of the day, this flatbread is all about assembly and a little bit of heat physics. It’s the ultimate "I have nothing in the fridge" dinner that still feels like you ordered it from a trendy bistro. Keep a few flatbreads in your freezer, and you'll never be more than fifteen minutes away from a truly spectacular meal.
