Ingredients
- 2 kg beef back ribs (or short ribs)
- 1 tablespoon Diamond Crystal kosher salt (or 1.5 teaspoons fine sea salt)
- 1 tablespoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1 cup beef broth
- 1/4 cup apple cider vinegar
- 1 cup of your favorite BBQ sauce
Directions
- Pat the beef ribs dry with paper towels and remove the thin membrane (silverskin) from the back of the ribs if still attached.
- In a small bowl, combine the Diamond Crystal kosher salt, smoked paprika, garlic powder, onion powder, black pepper, and cayenne pepper. Rub this spice mixture generously over all sides of the ribs.
- Pour the beef broth and apple cider vinegar into the Instant Pot liner, then place the trivet inside.
- Arrange the ribs standing up on the trivet, wrapping them in a circle with the meat side facing outward.
- Secure the lid, set the valve to sealing, and cook on High Pressure for 45 minutes. Allow a 15-minute natural pressure release before venting any remaining steam.
