Quick, buttery, and packed with garlic herb goodness, these Cheesy Garlic Ritz Bites are the ultimate 15-minute snack.

Cheesy Garlic Ritz Bites
Why This Recipe Works:
  • Freshly grated cheese melts into a perfect protein matrix without releasing excess oil.
  • Brushing with garlic butter creates a moisture barrier that keeps the crackers crisp, not soggy.
  • A quick bake ensures the cheese bubbles and browns before the delicate cracker base can burn.

I still remember the rainy Tuesday afternoon last November when my sister barged into my kitchen, starving, while I was in the middle of a work crisis. I had exactly ten minutes before my next Zoom call, a sleeve of stale crackers, and a block of cheddar. My first attempt was a greasy, charred disaster.

I burned my fingertips trying to salvage them.

Ritz crackers are already packed with shortening, meaning they burn instantly under direct heat. Pre-shredded cheese makes it worse because the added starch prevents a clean melt, leaving you with a sweaty, oily puddle.

To fix this, we need to manipulate the thermal mass of our ingredients. By brushing the crackers with a garlic-infused butter and using freshly grated low-moisture mozzarella, we create a barrier that slows down the heat transfer. This allows the cheese to melt beautifully into a gooey blanket before the cracker base can scorch. If you love this kind of quick, cheesy magic, you should also check out my Pillsbury Biscuit Garlic Butter Cheese Bombs or these Crispy Parmesan Mozzarella Bites.

Trust me, it is incredibly easy.

You do not need any fancy equipment, just a standard baking sheet and your own two hands to assemble these. They are perfect for game nights, much like my favorite Alabama Firecrackers or classic homemade mozzarella sticks.

Ingredients

  • 1 sleeve Ritz crackers (about 24 crackers)
  • 1 cup freshly grated low-moisture mozzarella cheese
  • 2 tablespoons unsalted butter, melted
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon Diamond Crystal kosher salt
  • 1 teaspoon finely chopped fresh parsley

Directions

  1. Preheat your oven to 400°F (204°C) and line a baking sheet with parchment paper.
  2. Arrange the Ritz crackers in a single layer on the prepared baking sheet, leaving a small space between each.
  3. In a small bowl, whisk together the melted butter, garlic powder, and Diamond Crystal kosher salt.
  4. Use a pastry brush to gently coat the top of each cracker with the garlic butter mixture.
  5. Mound a generous tablespoon of freshly grated mozzarella cheese onto the center of each cracker, pressing slightly with your thumb so it stays put.
  6. Bake for 4 to 5 minutes, watching closely, until the cheese is completely melted and starting to turn golden brown.
  7. Remove from the oven, sprinkle with fresh parsley, and let cool for two minutes before serving.

Notes

  • I highly recommend using Diamond Crystal kosher salt; if you only have fine table salt, cut the measurement in half (use 1/4 teaspoon instead of 1/2 teaspoon) to avoid over-salting.
  • Freshly grated low-moisture mozzarella is crucial here because pre-shredded bags contain anti-caking agents like potato starch, which disrupt the protein matrix and prevent a smooth, gooey melt.
  • Do not walk away from the oven during the final minutes of baking; the high fat content in Ritz crackers means they can go from perfectly golden to charred and bitter in a matter of 15 seconds.
  • After a day in the fridge, the crackers will inevitably lose their signature crispness as they absorb moisture from the cheese, so these are absolutely best enjoyed fresh out of the oven.
  • Think about this in terms of physics: overloading the crackers with cheese will lower the surface temperature too much, resulting in soggy cracker bases before the cheese can brown.
  • Cheap store-brand crackers failed my tests because they crumbled under the weight of the cheese, so stick to name-brand Ritz for the best structural integrity.

Serving Suggestions

Serve these warm while the cheese is still stretchy and pull-apart perfect. They make a fantastic addition to any party spread or a quick afternoon pick-me-up.

  • Pair with a bowl of warm marinara sauce for dipping.
  • Serve alongside a crisp green salad to cut through the rich, buttery cheese.
  • Arrange on a wooden platter with sliced cured meats for an instant mini-charcuterie board.
  • Garnish with a drizzle of hot honey for a sweet and spicy kick.
  • Serve with cold, refreshing drinks to balance the savory garlic notes.

Storage and Reheating

Let's be completely honest here.

These bites are designed to be eaten immediately while the cheese is gooey and the crackers are shatteringly crisp. If you do end up with leftovers, store them in an airtight container in the fridge for up to two days, but expect the cracker base to soften significantly.

Do not even think about using the microwave to reheat them. The microwave will turn your beautiful snacks into a sad, rubbery, soggy mess that will make you regret your life choices.

Instead, revive them in a 350°F (175°C) oven or toaster oven for about 3 to 4 minutes. This gentle heat coaxes the butter back into liquid form and crisps up the bottom of the crackers while remelting the cheese. Keep a very close eye on them so they do not burn during this second trip to the heat.

Ingredient Substitutes

If you find yourself missing an ingredient, here are the best swaps to keep your snack game strong without sacrificing flavor.

  1. Ritz Crackers: Club crackers or any buttery round cracker will work beautifully. Avoid thin saltines as they lack the necessary fat content to stay crisp under the cheese.
  2. Mozzarella: Freshly grated Monterey Jack, mild cheddar, or Provolone are excellent substitutes that melt just as smoothly.
  3. Garlic Powder: You can use garlic salt instead, but make sure to omit the additional kosher salt in the recipe to prevent a salt bomb.
  4. Fresh Parsley: Dried parsley or a pinch of Italian seasoning can be substituted, though fresh herbs add a lovely brightness.

I hope these quick little bites bring as much joy (and peace) to your chaotic afternoons as they did to mine. Let me know in the comments below if you tried any fun cheese swaps, and happy snacking!
