  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 tsp dried Italian seasoning
  • 1.5 cups shredded sharp cheddar cheese, divided
  • 1 cup shredded low-moisture mozzarella cheese

Directions

  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with non-stick spray or a smear of butter.
  2. Bring a large pot of salted water to a rolling boil. Cook the pasta for 2 minutes less than the package directions for al dente; it should still have a firm bite in the center. Drain and set aside.

  4. Stir in the minced garlic, Diamond Crystal kosher salt, black pepper, and Italian seasoning. Cook for 1 minute until fragrant.
  5. Pour in the tomato sauce and diced tomatoes. Simmer on low heat for 5 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  6. Remove the skillet from the heat. Stir in the cooked pasta and half of the cheddar cheese until melted and well combined.
  7. Transfer the mixture to the prepared baking dish. Spread it into an even layer, pressing down gently.
  8. Top evenly with the remaining cheddar and all of the mozzarella cheese. Bake for 20 minutes until the cheese is melted, bubbly, and golden brown around the edges. Let cool for 5 minutes before serving.

  • I highly recommend using Diamond Crystal Kosher Salt. If you only have standard table salt, cut the measurement in half (use 1/2 teaspoon instead of 1 teaspoon) to avoid an overly salty dish.
  • Undercooking the pasta is crucial because of starch gelatinization. The pasta will continue to absorb liquid and cook inside the oven; starting with fully cooked pasta guarantees a mushy, structurally compromised casserole.
  • Keep a close eye on the garlic during step 4. Garlic burns in under 30 seconds in a hot pan, which will impart a bitter, metallic taste to your entire sauce matrix.
