- 1/2 cup homemade Italian dressing
- 1/4 cup fresh basil leaves, chiffonade
- 1 teaspoon Diamond Crystal kosher salt (use 1/2 tsp for fine table salt)
Directions
- Bring a large pot of salted water to a rolling boil. Drop in the refrigerated tortellini and cook for exactly 3 to 4 minutes, or until they just float to the top and remain slightly firm.
- Drain the pasta immediately into a colander. Plunge the colander into a large bowl of ice water to halt the cooking process and preserve the starch structure.
