These crispy, golden jalapeno cheese twists are made with flaky puff pastry, sharp cheddar, and spicy jalapenos for the ultimate quick appetizer.

Jalapeno Cheese Twists
Why This Recipe Works:
  • Freshly grated cheese melts smoothly without anti-caking starch interference.
  • The twisting technique exposes the cheese to direct heat, creating crispy, caramelized edges.
  • Brushing with egg wash traps moisture, ensuring the puff pastry rises into flaky, laminated layers.

Three years ago, on a rainy Tuesday, I stood in my tiny kitchen frantically scraping burnt cheddar off my counter with a butter knife because I had let the cheese escape my pastry twists.

It was a glorious, greasy disaster.

If you love the spicy kick of crispy jalapeno poppers, these twists deliver that exact same joy but wrapped in flaky layers.

Bear with me here, but the physics of puff pastry requires a bit of science. As the oven heat rises, the water in the cheese vaporizes, creating steam that blows the pastry seams wide open before starch gelatinization can lock the structure in place. Pre-shredded cheese failed every single test because anti-caking agents prevent a cohesive protein matrix, leaving me with dry, oily husks.

But here is the simple fix: we twist the pastry tightly to trap the filling, and we use freshly grated sharp cheddar.

Trust me on this one.

Ingredients

  • 1 sheet puff pastry (thawed but cold)
  • 1 cup sharp cheddar cheese (freshly grated)
  • 1 large jalapeno (seeded and finely minced)
  • 1 large egg (beaten, for egg wash)
  • 1/2 tsp Diamond Crystal kosher salt
  • 1/4 tsp garlic powder

Directions

  1. Preheat your oven to 400°F (204°C) and line a large baking sheet with parchment paper.
  2. Roll out the thawed puff pastry sheet on a lightly floured surface into a 10x12-inch rectangle.
  3. Brush the surface lightly with the beaten egg wash, then sprinkle the garlic powder and Diamond Crystal kosher salt evenly.
  4. Distribute the freshly grated cheddar cheese and minced jalapeno over one half of the pastry sheet.
  5. Fold the empty half of the pastry over the filled half, pressing down firmly with your hands to seal the edges and compress the filling.
  6. Cut the pastry into 1-inch wide strips using a sharp pizza cutter or chef's knife.
  7. Hold both ends of a strip and twist them in opposite directions three to four times, then place on the prepared baking sheet.
  8. Brush the tops of the twists with the remaining egg wash and bake for 18 to 20 minutes until puffed and deeply golden brown.

Notes

  • For salt conversions, 1/2 teaspoon of Diamond Crystal kosher salt equals 1/4 teaspoon of fine table salt or Morton's kosher salt.
  • Using freshly grated cheese instead of pre-shredded is crucial because starch coatings on pre-shredded cheese absorb moisture and prevent the cheese from melting into a smooth protein matrix.
  • Keep an eye on the oven during the last 3 minutes of baking; the high fat content in puff pastry can cause the bottom of the twists to burn rapidly if your baking sheet is too thin.
  • After a day in the fridge, the puff pastry will lose its crispness due to moisture migration from the jalapenos, but a quick reheat will restore its texture.

Serving Suggestions

Serve these twists warm while the cheese is still gooey and the pastry is at its peak flakiness. They make a fantastic addition to any party spread or cozy night in.

  • Pair with a cool, creamy ranch dip to balance the jalapeno heat.
  • Serve alongside a warm bowl of soup for a cozy lunch.
  • Arrange on a charcuterie board with cured meats and olives.
  • Drizzle with a touch of hot honey right before serving for a sweet-spicy kick.

Storage and Reheating

Store any leftover twists in an airtight container in the refrigerator for up to three days. Do not wrap them in plastic wrap while they are still warm, as the trapped steam will turn your beautiful, flaky pastry into a sad, soggy sponge.

Nobody wants a soggy pastry.

To reheat, skip the microwave entirely because it will ruin the delicate layers of the puff pastry. Instead, pop them into a 350°F (175°C) oven or air fryer for 4 to 5 minutes until the cheese sizzles again.

You can also freeze the unbaked, twisted pastries on a tray, then transfer them to a freezer bag for up to two months.

Bake them straight from frozen.

Ingredient Substitutes

If you need to swap ingredients based on what is in your pantry, here are the best tested alternatives.

  1. Puff Pastry: You can substitute with crescent dough sheets, similar to our sausage cream cheese crescent rolls, though the texture will be softer and more bread-like.
  2. Jalapenos: Swap with canned green chiles or pickled jalapenos (patted dry) if you prefer a milder, tangier heat.
  3. Cheddar Cheese: Use Monterey Jack, Gruyere, or Pepper Jack for an extra kick of spice and excellent melting capability.

Go ahead and make a double batch of these. Your kitchen will smell like a high-end bakery, your friends will think you are a culinary genius, and you will definitely not regret having a few extra cheesy twists waiting for you in the freezer.
