- 1/4 tsp freshly cracked black pepper
Directions
- Cook the bacon in a skillet over medium heat until perfectly crispy. Tap the tongs against your hip to shake off excess grease, then transfer the bacon to paper towels to cool before chopping.
- Discard all but one teaspoon of bacon grease from the skillet. Sauté the diced jalapeños in the remaining grease for 2 minutes over medium-low heat to soften them and release their oil-soluble flavor compounds.
- In a large mixing bowl, whisk together the Greek yogurt, whipped cream cheese, garlic powder, Diamond Crystal kosher salt, and black pepper until completely smooth.
- Add the warm shredded chicken, sautéed jalapeños, shredded sharp cheddar, and sliced green onions to the bowl. Stir with a rubber spatula until the chicken is evenly coated in the dressing.
- Gently fold in the chopped crispy bacon just before serving to ensure it retains its crunch. </

- Salt Conversion: I highly recommend using Diamond Crystal kosher salt for this recipe; if you only have standard table salt, cut the volume in half (use 1/2 teaspoon) to prevent the salad from becoming overly salty.
- The Warm Chicken Trick: Shred your chicken while it is still warm. Warm chicken has a relaxed protein matrix that absorbs the creamy dressing much better than cold, pre-chilled chicken.
- Sautéing Warning: Do not let the jalapeños burn in the skillet. Burnt pepper skin turns incredibly bitter and will ruin the clean, grassy heat of the dressing.
- Storage Behavior: As this sits in the fridge, the jalapeño heat will naturally marry with the dairy and intensify. However, the bacon will lose its crunch, so store the bacon separately if you are meal-prepping.
