  • 12 egg roll wrappers
  • 8 oz cream cheese, softened (Philadelphia brand preferred)
  • 1 cup sharp cheddar cheese, shredded

  • 1/2 tsp garlic powder
  • 1/2 tsp Diamond Crystal kosher salt (or 1/4 tsp fine sea salt)
  • 1 egg, beaten (for egg wash)
  • Neutral oil (like canola or peanut oil) for frying

Directions

  1. In a medium bowl, vigorously mix the softened cream cheese, shredded cheddar, diced jalapeños, crumbled bacon, garlic powder, and Diamond Crystal kosher salt until completely combined.
  2. Lay one egg roll wrapper on a clean cutting board with one corner pointing toward you (like a diamond).
  3. Spoon about 2 tablespoons of the cream cheese mixture onto the lower third of the wrapper.
  4. Fold the bottom corner up over the filling, tucking it gently under, then fold in the left and right side corners.
  5. Brush the top corner with the beaten egg wash, then roll the wrapper tightly upward to seal it completely.
  6. Heat about 2 inches of neutral oil in a heavy-bottomed Dutch oven or deep skillet to 350°F (175°C).
