Jalapeno Popper Twists
Crispy, cheesy, and perfectly spicy, these puff pastry Jalapeno Popper Twists are the ultimate game day appetizer. Easy to prep and loaded with cream cheese, bacon, and fresh jalapenos.
- Mixing cream cheese with low-moisture cheddar prevents the filling from completely liquefying and running out of the twists.
- Twisting the puff pastry exposes the filling, allowing steam to escape so the pastry stays incredibly flaky instead of getting soggy.
- Brushing the twists with an egg wash caramelizes the exterior, creating a beautiful golden-brown crust that holds its crunch for hours.
I still remember the disastrous Super Bowl party of 2018 when my husband dropped an entire tray of cream-cheese-stuffed peppers face-down onto our cream-colored rug. The stain is gone, but the trauma remains.
Since then, I have been on a strict personal mission to make the classic jalapeno popper completely portable.
My early attempts at wrapping jalapenos in puff pastry were absolute disasters because the cream cheese would liquefy under the oven's high heat, blowing past the seams and leaving me with empty, sad pastry shells on a greasy baking sheet. I tried pinching the puff pastry seams until my fingertips went numb, but the steam pressure inside the dough always won the battle.
The breakthrough came when I stopped trying to encase the cheese and instead decided to twist it directly into the dough, exposing the filling so steam could escape freely. By mixing the cream cheese with a sharp cheddar and a starch binder, we create a stable emulsion that clings to the pastry spirals rather than running away.
This method is hands down the easiest way to get that classic spicy, bacon-flecked crunch without any of the stuffing headaches.

Ingredients
- 1 sheet puff pastry, thawed but cold (approx. 250g)
- 115g (4 oz) cream cheese, softened
- 100g (1 cup) sharp cheddar cheese, finely shredded
- 3 medium jalapenos, seeded and very finely minced
- 4 slices bacon, cooked until crispy and finely crumbled
- 1/2 tsp garlic powder
- 1/2 tsp Diamond Crystal kosher salt (or 1/4 tsp fine table salt)
- 1 large egg, beaten (for egg wash)
Directions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a medium bowl, vigorously mix the softened cream cheese, shredded cheddar, minced jalapenos, crumbled bacon, garlic powder, and kosher salt until a cohesive paste forms.
- Roll out the cold puff pastry sheet on a lightly floured surface into a 10x12-inch rectangle.
- Spread the cream cheese mixture evenly over one half of the pastry sheet, leaving a tiny border along the edges.
- Fold the empty half of the pastry over the filled half to create a 5x12-inch sandwich, then press the edges gently to seal.
- Use a sharp knife or pizza cutter to slice the pastry into 1-inch wide strips, yielding about 10 to 12 strips.
- Hold both ends of a strip and twist them in opposite directions three or four times, then place the twist onto the prepared baking sheet, pressing the ends down to secure.
- Brush the twists lightly with the beaten egg wash to ensure a beautiful, golden-brown finish.
- Bake for 18 to 20 minutes, or until the pastry is puffed, deeply golden, and the cheese is bubbling. Let cool for 5 minutes before serving.
Notes
- Salt Conversion: If you do not have Diamond Crystal kosher salt, use exactly 1/4 teaspoon of standard fine table salt to avoid over-salting the filling.
- The Science of Cold Pastry: Keep your puff pastry as cold as possible before baking; the solid butter layers are what release steam in the hot oven, creating those flaky, airy pockets.
- Workflow Warning: Keep a close eye on the oven around the 15-minute mark, as exposed bacon bits and cheese can burn quickly if your oven has uneven hot spots.
- Storage Behavior: These twists will lose their crispness in the refrigerator due to the moisture in the cream cheese, but they revive beautifully when reheated in a dry pan or hot oven.

Storage and Reheating
Let's be completely honest: puff pastry is a fleeting beauty.
Once these twists sit in the fridge for a day, the moisture from the cream cheese will inevitably migrate into the delicate pastry layers, turning your crispy masterpiece into a somewhat sad, limp noodle. Do not panic, and absolutely do not throw them away.
You can easily restore them to their former, shatteringly crisp glory with a quick trip to a hot oven or air fryer.
Avoid the microwave at all costs unless you actually enjoy eating rubbery, damp dough. Just pop them onto a baking sheet at 375°F (190°C) for about five to seven minutes, and watch the fat in the pastry re-fry the layers back to life.
Ingredient Substitutes
If you find yourself missing an ingredient or want to adapt this recipe to what's currently in your fridge, here are the easiest swaps:
- Puff Pastry: If you don't have puff pastry, you can use crescent dough sheets, though the texture will be more bread-like and soft rather than shatteringly crisp.
- Jalapenos: Swap the fresh jalapenos for canned diced green chiles for a much milder kick, or use chopped pickled jalapenos for a tangy twist.
- Bacon: For a vegetarian version, omit the bacon entirely or swap it with smoky sun-dried tomatoes or a pinch of smoked paprika to keep that rich, savory depth.
- Cheddar Cheese: You can easily substitute the sharp cheddar with Monterey Jack, Pepper Jack (for extra heat), or even a smoky Gouda.
These twists have officially replaced the dreaded stuffed peppers at our house, and my rugs have never been happier. Bake a batch for your next game night, keep an eye on the oven, and let me know if they actually make it to kickoff before being completely devoured.
