Directions
- In a medium bowl, gently combine the ground chicken thigh, grated cold butter, garlic powder, onion powder, Diamond Crystal kosher salt, and black pepper. Do not overmix, or the protein matrix will become dense and tough.
- Divide the mixture into 4 equal portions and shape them into loose, round balls. Place them on a plate and chill in the fridge for 10 minutes to keep the butter cold.
