Ingredients

  • 1 lb (450g) smoked sausage or kielbasa, sliced into 1/4-inch rounds

  • 1/2 medium yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp Diamond Crystal kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 1/2 tsp smoked paprika
  • 1 tbsp apple cider vinegar

Directions

  1. Heat olive oil in a large, heavy cast-iron skillet over medium-high heat. Add the sliced sausage and sear until deeply browned on both sides, about 5-6 minutes.
  2. Fish out the sausage with a slotted spoon, leaving the rendered fat in the pan, and set it aside on a plate.
  3. Melt the butter directly into the hot sausage fat. Add the sliced onions and cook for 3 minutes until they begin to soften.
