Ingredients
- 1 cup graham cracker crumbs (about 8 full sheets)

Directions
- In a medium bowl, combine the graham cracker crumbs, melted butter, and 1 tablespoon of granulated sugar. Stir with a fork until the mixture resembles wet sand, then set aside.
- Whisk the egg yolks and 1/2 cup of granulated sugar in a small saucepan until pale and slightly thickened. Whisk in the key lime juice and lime zest.
- Place the saucepan over medium-low heat. Cook, whisking constantly, for 5 to 7 minutes until the mixture thickens enough to coat the back of a spoon. Do not let it boil, or the eggs will scramble.
- Remove the saucepan from the heat. Whisk in the chilled, cubed butter one piece at a time until fully melted and smooth. Transfer the curd to a bowl, press plastic wrap directly onto the surface, and chill in the fridge for at least 1 hour.
- In a large bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract with a hand mixer until stiff peaks form.
- To assemble, layer the graham cracker crumbs, chilled lime curd, and whipped cream into individual glasses or a large trifle bowl. Repeat the layers, finishing with a dollop of whipped cream and a sprinkle of crumbs. </

- For the whipped cream, I highly recommend using Diamond Crystal kosher salt (just a tiny pinch, about 1/16 teaspoon or 0.25 grams) to balance the sweetness; if using Morton's, cut that amount in half.
- Key limes contain higher concentrations of citric acid and oil-soluble flavor compounds in their zest compared to standard Persian limes, which gives this trifle its signature punchy, aromatic profile.
- When cooking the lime curd, keep your whisk moving constantly across the bottom of the pan to prevent the egg proteins from overheating and scrambling; if you see tiny lumps forming, immediately fish them out by pressing the curd through a fine-mesh sieve.
