Directions

  1. In a food processor or high-speed blender, combine the cottage cheese, maple syrup, vanilla extract, lemon zest, and Diamond Crystal kosher salt. Blend on high for 45 to 60 seconds until completely smooth and velvety, with no visible curds remaining.
  2. Transfer the smooth cheese mixture to a medium mixing bowl. Gradually fold in the almond flour using a rubber spatula until a soft, cohesive dough forms.
