Directions
- Add the cottage cheese, maple syrup, lemon zest, lemon juice, vanilla extract, and Diamond Crystal kosher salt to a high-speed food processor. Blend for 1 to 2 minutes until completely smooth and no curds remain.
- Pour the blended mixture into a medium mixing bowl. Stir in the oat flour and coconut flour using a rubber spatula until a soft dough forms.
- Let the dough rest for 5 minutes. This allows the coconut flour to fully hydrate and absorb the moisture.
