Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1.5 lbs Yukon Gold potatoes, cut into 3/4-inch cubes
  • 2 medium zucchini, sliced into 1/2-inch half-moons
  • 4 tbsp extra virgin olive oil, divided
  • 3 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 6 garlic cloves, finely minced
  • 1.5 tsp Diamond Crystal kosher salt, divided
  • 1 tsp dried oregano
  • 1/2 tsp freshly cracked black pepper

Directions

  1. Preheat your oven to 425°F (218°C).
  2. In a small bowl, whisk together 3 tablespoons of olive oil, lemon juice, lemon zest, minced garlic, oregano, black pepper, and 1 teaspoon of Diamond Crystal kosher salt to create an emulsified marinade.
  3. Place the cubed chicken in a bowl, pour half of the marinade over it, toss to coat, and let it sit at room temperature while you prep the vegetables.
  4. Toss the cubed potatoes with the remaining 1 tablespoon of olive oil and the remaining 1/2 teaspoon of salt, then spread them in a single layer on a large rimmed baking sheet.
  5. Roast the potatoes for 15 minutes until they just start to brown at the edges.
  6. Remove the baking sheet from the oven, push the potatoes to one side, and add the marinated chicken and sliced zucchini to the empty spaces.
  7. Drizzle the remaining marinade over the zucchini, then return the pan to the oven and roast for an additional 18 to 20 minutes, or until the chicken reaches an internal temperature of 165°F and the potatoes are crispy.

Notes

  • Salt Conversion: This recipe specifies Diamond Crystal Kosher Salt. If you are using Morton's kosher salt or fine table salt, cut the volume in half (use 3/4 teaspoon total) to avoid an over-salted disaster.
  • Garlic Science: Garlic contains allicin, which is highly volatile. Grating or mincing it fresh right before mixing it with the acidic lemon juice helps stabilize the flavor compounds, ensuring a sharp, bright bite that doesn't turn bitter during roasting.
