Ingredients

  • 0.5 tsp freshly cracked black pepper
  • 2 tbsp extra virgin olive oil
  • 2 tbsp unsalted butter
  • 6 garlic cloves, finely minced
  • 1 cup heavy cream (36% fat content)
  • 3 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 340g penne or rigatoni pasta
  • 0.5 cup freshly grated Parmesan cheese
  • 0.25 cup fresh Italian flat-leaf parsley, chopped

Directions

  1. Bring a large pot of salted water to a rolling boil. Cook the pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
  2. Season the chicken cutlets generously with 1 teaspoon of Diamond Crystal kosher salt and black pepper. Heat olive oil in a large skillet over medium-high heat.
  3. Sear the chicken for 5 to 6 minutes per side until a deep golden crust forms and the chicken is cooked through. Transfer to a cutting board, let it rest for 5 minutes, then slice.
  4. Reduce the skillet heat to medium. Melt the butter and add the minced garlic, sautéing for exactly 1 minute until fragrant but not browned.
  5. Pour in the heavy cream and bring to a gentle simmer, scraping up the browned bits (fond) from the bottom of the pan. Let it simmer for 3 minutes to thicken slightly.
  6. Remove the skillet from the heat entirely. Whisk in the fresh lemon juice, lemon zest, remaining salt, and grated Parmesan cheese until smooth.
  7. Toss the drained pasta and sliced chicken into the sauce. Gradually splash in the reserved pasta water, tossing continuously, until the sauce glosses over and clings to the pasta. Garnish with fresh parsley and serve immediately.

Notes

  • Salt Conversion: We highly recommend using Diamond Crystal kosher salt. If you are using standard table salt or fine sea salt, cut the volume in half (use 3/4 teaspoon instead of 1.5 teaspoons) to avoid over-salting.
  • Dairy Stability: Heavy cream is essential here because its high fat content (around 36%) makes it much more stable against acid-induced curdling than milk or half-and-half, which contain too much water and too little fat to resist splitting.
  • Workflow Warning: Garlic burns in the blink of an eye. Have your heavy cream measured and sitting right next to the stove before you toss the garlic into the hot butter, so you can instantly stop the cooking process.
  • Storage Behavior: As this pasta sits in the fridge, the starch matrix will continue to absorb liquid, making the sauce look dry the next day. Always save an extra splash of pasta water or use a splash of milk when reheating to loosen it back up.
