Lemon Garlic Cod
Tender, flaky Lemon Garlic Cod baked to absolute perfection with a Mediterranean olive, tomato, and caper topping. A healthy, 20-minute dinner that is incredibly easy to make.
- Acid-Fat Balance: The sharp lemon juice cuts through the rich butter, while the olive oil carries the oil-soluble flavor compounds of garlic deep into the fish.
- Moisture Barrier: Baking the cod in a shallow bath of liquid prevents the outer edges from drying out before the center reaches its ideal temperature.
- Mediterranean Topping: Olives and capers add a briny, salty pop that contrasts beautifully with the mild, sweet profile of the cod.
I still remember the Tuesday night I ruined a gorgeous piece of fish because I was terrified of overcooking it. It left me with a rubbery, lukewarm disaster that even my garbage disposal seemed to reject.
I actually cried over that fish.
The problem is that lean white fish like cod has almost zero fat to cushion it, meaning the window between translucent raw and chalky cardboard is about thirty seconds. If you bake it dry, the delicate protein matrix tightens up and squeezes out every drop of moisture, leaving you with a sad, stringy mess.
Bear with me here: the physics of baking fish is all about heat transfer. When you bathe those fillets in a shallow pool of olive oil, fresh lemon juice, and melted butter, you create an emulsified barrier that traps the steam. This keeps the flesh incredibly succulent.
Trust me on this one, it is hands down the easiest way to get restaurant-quality seafood at home.

Ingredients
- 4 cod fillets (about 6 ounces each, thawed if using frozen salmon fillets or other frozen white fish)
- 1.5 tsp Diamond Crystal kosher salt
- 1/2 tsp freshly cracked black pepper
- 3 tbsp extra virgin olive oil
- 2 tbsp unsalted butter, melted
- 4 garlic cloves, minced
- 3 tbsp fresh lemon juice
- 1/2 cup cherry tomatoes, halved
- 1/4 cup Kalamata olives, pitted and chopped
- 2 tbsp capers, drained
- 1 tsp dried oregano
- Fresh parsley, chopped (for garnish)
Directions
- Preheat your oven to 400°F (200°C). Pat the cod fillets completely dry with paper towels to ensure the seasoning sticks and doesn't just slide off.
- In a small bowl, whisk together the olive oil, melted butter, minced garlic, and fresh lemon juice until slightly emulsified.
- Place the cod fillets in a 9x13-inch baking dish. Season both sides evenly with the Diamond Crystal kosher salt and black pepper.
- Pour the lemon garlic butter mixture over the fillets, making sure each piece is thoroughly coated.
- Scatter the halved cherry tomatoes, chopped Kalamata olives, capers, and dried oregano around and on top of the fish.
- Bake for 12 to 15 minutes, or until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C). Do not overbake!
- Garnish with fresh chopped parsley and serve immediately with extra lemon wedges.
Notes
- Salt Conversion: We highly recommend using Diamond Crystal kosher salt. This brand is our absolute favorite because its hollow flakes dissolve instantly, whereas other dense table salts failed our tests by creating harsh, unevenly salty pockets. If you only have standard table salt, cut the measurement in half (use 3/4 teaspoon instead of 1.5 teaspoons).
- The Science of Flakiness: Cod has a delicate protein structure. Baking at a relatively high temperature (400°F) cooks the fish quickly, preventing the collagen between the muscle fibers from dissolving completely, which keeps the fish intact rather than turning mushy.
- Garlic Burn Warning: Ensure your minced garlic is submerged in the oil-butter mixture rather than sitting dry on top of the fish. Dry garlic will burn quickly in a 400°F oven, turning bitter and ruining the delicate flavor profile.
- Storage Behavior: Leftover cooked cod will release water as it sits in the fridge, which can make the topping a bit soggy. For best results, consume within 2 days and reheat gently in a skillet over low heat rather than the microwave.
Serving Suggestions
This bright, briny fish deserves sides that can soak up that liquid gold lemon-butter sauce left in the baking dish.
- Pair it with a side of crispy Greek Lemon Potatoes to keep the Mediterranean theme going strong.
- Serve over a bed of fluffy quinoa or white rice to catch every single drop of the garlic butter sauce.
- Accompany with a refreshing Mediterranean Orzo Pasta Salad for a complete, vibrant summer meal.
- Add a side of roasted asparagus or green beans tossed in olive oil and a squeeze of fresh lemon.
Storage and Reheating
Seafood is notoriously finicky when it comes to leftovers.
If you do have leftovers, store them in an airtight glass container in the fridge for up to two days. Avoid plastic containers if you can, as the garlic and fish oils tend to cling to the plastic even after multiple runs through the dishwasher.
When you're ready to reheat, step away from the microwave.
Microwaving will instantly overcook the delicate protein matrix, turning your beautiful cod into rubber. Instead, place the fish and its juices in a small skillet over medium-low heat, cover with a lid, and let it warm through gently for about five minutes.
Ingredient Substitutes
If you don't have everything on hand, don't panic. Here are some easy swaps that work beautifully:
- The Fish: If cod isn't available, any firm white fish like halibut, haddock, or sea bass will work. You can even use this sauce on Mediterranean Baked Fish varieties.
- The Olives: If Kalamata olives are too strong for your taste, swap them for mild green Castelvetrano olives or omit them entirely.
- The Butter: For a completely dairy-free version, replace the butter with more high-quality extra virgin olive oil.
- Dried Oregano: Dried thyme or a pinch of Italian seasoning makes an excellent substitute if you're out of oregano.
There is something incredibly satisfying about pulling a bubbling, fragrant dish out of the oven in under twenty minutes. It makes a random Tuesday feel like a sun-drenched holiday on the coast of Greece. Pour yourself a crisp glass of white wine, grab a piece of crusty bread to swipe up that garlic butter, and enjoy every single bite.
