Ingredients

  • 6g Knox unflavored gelatin (bloomed in 2 tbsp cold water for glaze)
  • 70g sweetened condensed milk
  • 100g high-quality white chocolate chips
  • Pink gel food coloring
  • 6 round shortbread cookies

Directions

  1. Puree the raspberries and strain out the seeds, then heat the puree in a small saucepan with 30g sugar and 1 tsp lemon juice until dissolved.
  2. Stir the bloomed gelatin into the warm raspberry mixture until melted, pour into small semi-sphere silicone molds, and freeze for 2 hours.
  3. Beat the cream cheese, melted white chocolate, powdered sugar, lemon zest, and 2 tbsp lemon juice until completely smooth.
