Ingredients

  • 1 lb (450g) store-bought or homemade pizza dough, at room temperature
  • 1 cup pizza sauce, divided
  • 2 cups shredded low-moisture mozzarella cheese, divided
  • 1/2 cup pepperoni slices, finely chopped
  • 1/4 cup unsalted butter, melted
  • 1/2 tsp garlic powder
  • 1/2 tsp Diamond Crystal kosher salt
  • 1 tbsp grated Parmesan cheese
  • 1/2 tsp dried oregano

Directions

  1. Preheat your oven to 450°F (230°C). Generously grease a standard 12-cup muffin tin with olive oil or non-stick spray.
  2. Divide the pizza dough into 12 equal pieces. Roll each piece into a ball, then use your fingers to flatten and stretch each ball into a thin 4-inch disc.
  3. Press each dough disc firmly into the bottom and up the sides of each muffin cup, ensuring the dough reaches the top rim.
  4. Place a small pinch of shredded mozzarella cheese (about 1 tablespoon) into the bottom of each dough cup.
  5. Spoon 1 tablespoon of pizza sauce over the cheese in each cup, then top with a few chopped pepperoni slices.
  6. Divide the remaining mozzarella cheese generously over the top of each puff, letting some cheese spill onto the metal rim of the muffin tin to create caramelized edges.
  7. Bake for 10 to 12 minutes, or until the dough is golden brown and the cheese on top is bubbly and deeply caramelized.
  8. While baking, whisk together the melted butter, garlic powder, kosher salt, Parmesan, and dried oregano in a small bowl.
  9. Remove the puffs from the oven and immediately brush the garlic butter generously over the hot crusts and cheese. Let them cool for 3 minutes, then use a butter knife to gently pop them out of the tin.

Notes

  • I highly recommend using Diamond Crystal kosher salt; if you are using Morton's kosher salt or fine table salt, cut the volume in half (use 1/4 teaspoon instead of 1/2 teaspoon) to avoid an overly salty crust.
  • Low-moisture mozzarella is essential here because its lower water content prevents the starch gelatinization of the dough from turning soggy, ensuring a crispy crust.
  • Keep a close eye on the oven during the last 2 minutes of baking; the cheese on the metal rim caramelizes quickly, and there is a very fine line between beautifully charred lace and bitter, burnt carbon.
  • After a day in the fridge, the gluten structure will tighten and the crust will lose its crispness, but reheating them in an air fryer at 350°F for 3 minutes completely restores that fresh-out-of-the-oven texture.
  • If your dough is resisting stretching and snapping back, let it rest on the counter for 10 minutes to relax the gluten matrix before trying again.
