Directions

  1. Heat a large skillet over medium-high heat. Add the ground beef, breaking it apart with a wooden spoon until browned and cooked through, about 6 to 8 minutes.
  2. Sprinkle the taco seasoning and Diamond Crystal kosher salt over the beef. Pour in the water, stir well, and simmer for 2 to 3 minutes until the liquid is fully absorbed and the beef is saucy. Transfer the beef to a clean bowl.
  3. Lay a flour tortilla flat on a clean cutting board. Place a quarter of the grated mozzarella and cheddar in the center of the tortilla, then top with a generous scoop of the seasoned beef.
  4. Fold the bottom edge of the tortilla up over the filling, then fold the sides inward to form a tight, square pocket, completely enclosing the beef and cheese. Repeat with the remaining tortillas.
  5. Wipe the skillet clean and heat the neutral oil over medium heat. Place the pocket tacos seam-side down in the pan and cook for 3 to 4 minutes until golden brown and crispy, then flip and cook the other side for another 3 minutes until the cheese inside is fully melted.

  • Salt Conversion: I use Diamond Crystal kosher salt for this recipe. If you are using fine sea salt or table salt, cut the measurement in half to avoid over-salting the beef.
