The simple fix is physics.

You must press the graham crumbs with the flat bottom of a metal measuring cup until your wrist aches, creating a dense, impermeable barrier. Then, we pour the sweetened condensed milk directly over the crust before adding the toppings, which allows the milk to hydrate the crumbs and lock them into a solid protein matrix during the bake.   • 1/2 cup (113g) unsalted butter, melted
  • 1/4 tsp Diamond Crystal kosher salt
  • 1 can (14 oz / 396g) Eagle Brand sweetened condensed milk
  • 1 cup (170g) semi-sweet chocolate chips
  • 1 cup (170g) butterscotch chips
  • 1 cup (115g) chopped pecans
  • 1.33 cups (100g) sweetened shredded coconut

Directions

  1. Preheat your oven to 350°F (175°C) and line a 9x13-inch metal baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a medium bowl, stir together the graham cracker crumbs, melted butter, and Diamond Crystal kosher salt until the mixture resembles wet sand.
  3. Dump the crumb mixture into the prepared pan and press it firmly into an even layer using the flat bottom of a metal measuring cup.
  4. Pour the sweetened condensed milk evenly over the crust, making sure to cover the entire surface right up to the edges.
  5. Sprinkle the chocolate chips, butterscotch chips, and chopped pecans evenly over the milk layer.
  6. Top with the shredded coconut, pressing down gently with your hands or a spatula so the toppings cling to the milk layer.
  7. Bake for 25 to 30 minutes until the coconut is golden brown and the edges are bubbling and caramelized, then let cool completely before slicing.

Notes

  • We highly recommend Eagle Brand sweetened condensed milk (1 can = 14 oz / 396g). Generic brands often have higher water content, which prevents the bars from setting cleanly.
  • The Diamond Crystal kosher salt (1/4 teaspoon, or use 1/8 teaspoon of fine table salt) is crucial to cut through the intense sweetness of the butterscotch and condensed milk, balancing the flavor profile on a molecular level.
  • Keep a close eye on the oven during the last 5 minutes of baking. Coconut transitions from beautifully toasted to bitter and burnt in a matter of seconds; if it browns too quickly, tent the pan loosely with foil.
  • These bars actually improve after a day in the fridge. The protein matrix in the condensed milk fully solidifies, making them much easier to slice into clean, sharp squares.
  • Use a metal baking pan rather than glass. Metal conducts heat more efficiently, ensuring a crispy crust and preventing the edges from becoming rock-hard before the center is cooked.

Serving Suggestions

These rich, gooey bars are incredibly decadent on their own, but you can easily elevate them for a dessert platter or a cozy afternoon treat.

  • Serve alongside a hot cup of black coffee or espresso to cut through the intense sweetness.

Store these bars in an airtight container at room temperature for up to 3 days.

If you want them to last longer, slide them into the fridge where they will keep beautifully for up to a week. The cold temperature actually makes the caramel layer incredibly chewy, which is my personal favorite way to eat them.

They freeze like a dream.

Wrap individual squares tightly in plastic wrap, then place them in a freezer-safe zip-top bag for up to 3 months. When the craving strikes, just let a bar thaw on the counter for 15 minutes, or eat it straight from the freezer if you enjoy a serious jaw workout.
