Mango Cabbage Slaw
A vibrant, crunchy Mango Cabbage Slaw tossed in a zesty lime dressing. Perfect for tacos, grilled meats, or eating straight from the bowl.
- Osmotic Control: Pre-salting the cabbage draws out excess water, ensuring the slaw stays incredibly crisp for days instead of getting soggy.
- Acid Balance: Fresh lime juice cuts through the natural sweetness of ripe mangoes, creating a bright, balanced flavor profile.
- Textural Contrast: Combining thin-shredded cabbage with julienned mangoes and crunchy bell peppers provides a satisfying bite in every forkful.
I still remember the humid July afternoon my cousin brought a soggy, mayonnaise-drenched cabbage mix to our family barbecue, only for it to sit untouched as the ice melted in the cooler.
My fingers still ache from slicing three pounds of red cabbage that morning, determined to prove that raw vegetables could actually taste vibrant.
Most slaws fail because home cooks toss the dressing onto the cabbage too early, triggering osmotic pressure that draws out water and turns the bowl into a swampy mess. When salt meets raw cabbage, it pulls moisture out of the plant cells, which dilutes your dressing and leaves the vegetables limp instead of crisp.
The secret is salting and rinsing the cabbage first to collapse its cellular structure. This simple step keeps everything incredibly crunchy.
Trust me on this one, this extra step makes all the difference.

Ingredients
- 4 cups shredded green cabbage
- 2 cups shredded red cabbage
- 1 large ripe mango, peeled and julienned
- 1 red bell pepper, thinly sliced
- 1/2 cup fresh cilantro, chopped
- 1/4 cup red onion, finely diced
- 1/4 cup fresh lime juice
- 2 tbsp extra virgin olive oil
- 1 tbsp honey
- 1 tsp Diamond Crystal kosher salt
- 1/4 tsp freshly cracked black pepper
Directions
- Place the shredded green and red cabbage in a large colander set over a bowl. Toss with the kosher salt and let sit for 15 minutes to draw out excess moisture.
- Rinse the cabbage under cold water, then transfer it to a clean kitchen towel or salad spinner. Squeeze or spin until completely dry.
- In a large mixing bowl, whisk together the fresh lime juice, extra virgin olive oil, honey, and black pepper until emulsified.
- Add the dried cabbage, julienned mango, red bell pepper, chopped cilantro, and red onion to the bowl with the dressing.
- Toss gently with tongs until all the ingredients are evenly coated. Serve immediately or chill for up to an hour before serving. </
Notes
- We highly recommend using Diamond Crystal kosher salt; if you are using Morton's kosher salt or fine table salt, cut the volume in half (use 1/2 teaspoon instead of 1 teaspoon) to avoid over-salting.
- Lime juice contains citric acid, which acts as a natural preservative to prevent the julienned mango from oxidizing and turning brown, while also breaking down tough vegetable fibers.
- Do not skip drying the cabbage after rinsing. Any lingering water will prevent the oil-based dressing from clinging to the vegetables, leaving you with a watery pool at the bottom of your bowl.
- While this slaw holds up beautifully compared to mayo-based salads, the mangoes will soften after 24 hours in the fridge. For the absolute best texture, consume within two days.
- Choose a mango that is firm but yields slightly to gentle pressure. Overripe mangoes will turn to mush when tossed.
- Feel free to add a pinch of chili flakes or a diced jalapeño if you prefer a sweet-and-spicy kick.
Serving Suggestions
This vibrant slaw is incredibly versatile and brings a burst of tropical freshness to any plate. Pair it with savory, smoky, or grilled dishes to balance out rich flavors.
- Taco Topping: Pile it high on warm tortillas filled with grilled fish or shrimp.
- Alongside Low Carb Fish Taco Bowls for an extra layer of crunch.
- As a refreshing side dish next to a hot Thai Chicken Wrap with Crunchy Asian Slaw.
- Spoon it over grilled chicken breast or pork chops for a sweet and savory contrast.
- Serve it as a bright, crunchy component in a Vietnamese Noodle Bowl with Lemongrass Chicken.
- Enjoy it as a light, standalone lunch alongside a simple Mango Salad.
Storage and Reheating
Store any leftover slaw in an airtight glass container.
Because we took the time to salt and dry the cabbage, it won't turn into a watery mess overnight. The cabbage will actually retain its crunch surprisingly well for up to three days in the refrigerator.
However, keep in mind that the mango slices will naturally soften and release their sweet juices over time. This sweet syrup will blend with the lime dressing, making the slaw slightly sweeter on day two.
Give the slaw a vigorous toss with tongs before serving to redistribute the settled dressing. If it looks a bit dry, simply squeeze a fresh lime wedge over the top to wake up the flavors.
Do not freeze this recipe under any circumstances.
Ingredient Substitutes
If you don't have all the ingredients on hand, don't worry. This recipe is highly adaptable.
- Mango: If fresh mangoes aren't in season, you can substitute with fresh pineapple chunks or even peaches.
- Cabbage: You can use a pre-shredded coleslaw mix from the grocery store to save time, though fresh-cut cabbage has a superior crunch.
- Honey: Swap the honey for maple syrup or agave nectar to make this recipe completely vegan.
- Cilantro: If you are one of those people for whom cilantro tastes like soap, fresh flat-leaf parsley or mint makes a wonderful alternative.
- Lime Juice: Apple cider vinegar or rice vinegar can be used in a pinch, though you will lose that distinct tropical citrus note.
I hope this colorful bowl brings as much sunshine to your table as it does to mine, even if you are just eating it standing up at the kitchen counter.
