- 1/4 tsp Diamond Crystal kosher salt
- 2 ripe mangoes, pureed (about 1.5 cups puree)
- 1 tbsp fresh lime juice
- Fresh mango chunks, for garnish
Directions
- In a small bowl, combine the crushed biscuits and melted butter. Press a spoonful of the mixture into the bottom of 6 small serving glasses to form a compact base.
- In a medium bowl, beat the softened cream cheese, powdered sugar, vanilla bean paste, and Diamond Crystal kosher salt until completely smooth and creamy.
- In a separate chilled bowl, whip the cold heavy whipping cream to stiff peaks. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Spoon or pipe the cheesecake filling over the biscuit base in each glass, leaving about half an inch of space at the top.
- Stir the lime juice into the mango puree. Spoon the puree evenly over the cheesecake layer in each cup.
- Chill the cups in the refrigerator for at least 2 hours before serving. Garnish with fresh mango chunks just before presenting. </
Notes
- I highly recommend using Philadelphia block cream cheese; do not use tub spreadable cream cheese as it contains extra water. If using Diamond Crystal kosher salt, use 1/4 teaspoon; if using fine table salt, reduce to 1/8 teaspoon.
- Heavy whipping cream must be cold (below 40°F) to allow the fat globules to trap air efficiently, creating the stable protein matrix needed to hold up the cream cheese without gelatin.
- Do not over-whip the heavy cream once it is combined with the cream cheese, or the fat will separate and turn grainy, ruining the silky texture.
- After 24 hours in the fridge, the biscuit base will lose some of its initial crunch as it absorbs moisture from the filling, though the flavor actually deepens and improves.
- For the best flavor, use sweet, fiberless mangoes like Ataulfo (honey mangoes) rather than stringy Tommy Atkins varieties.
