Directions

  1. Place the diced English cucumber in a colander and sprinkle with a pinch of salt to draw out excess moisture. Let it sit for 10 minutes, then pat dry with a paper towel.
  2. In a small bowl, whisk together the fresh lime juice, extra virgin olive oil, Diamond Crystal kosher salt, and black pepper until emulsified.
  3. Gently toss the diced avocado in a tablespoon of the lime dressing to coat it completely, which prevents browning.
  4. In a large serving bowl, combine the dried cucumbers, diced mangoes, fresh blueberries, and the dressed avocado.

  • Do not prep the avocado more than 20 minutes before serving, or the cellular walls will break down and turn your salad into a mushy green paste.
  • After 24 hours in the fridge, the blueberries will bleed slightly into the mangoes, which tastes delicious but looks a tad messy.

Storage and Reheating

Let's be completely honest about leftovers here. This salad is a physical masterpiece for about four hours after you toss it, but the fridge changes things.

The avocado will inevitably lose its bright luster by day two, even with the protective lime juice barrier.

Do not freeze this.

The water content in the cucumbers and mangoes will expand and destroy their cellular structure, leaving you with a mushy, thawed puddle that is entirely unappetizing.
