Ingredients

  • 2 cups cooked chicken thighs, shredded or cubed

  • 1 cup fresh baby spinach, chopped
  • 1/2 cup plain Greek yogurt
  • 2 tbsp mayonnaise
  • 1/2 tsp Diamond Crystal kosher salt
  • 1/4 tsp freshly cracked black pepper
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1 tbsp fresh lemon juice

Directions

  1. In a large mixing bowl, whisk together the Greek yogurt, mayonnaise, reserved sun-dried tomato oil, lemon juice, garlic powder, salt, and black pepper until smooth and fully emulsified.
  2. Add the shredded chicken thighs to the bowl and toss until every piece is coated in the dressing.
  3. Fold in the chopped sun-dried tomatoes, chopped baby spinach, and grated Parmesan cheese using a rubber spatula.
  4. Taste and adjust seasoning with extra salt or lemon juice if needed.
  5. Cover and chill in the refrigerator for at least 30 minutes before serving to let the flavors meld.

Notes

  • Salt Conversion: We use Diamond Crystal kosher salt here. If you are using fine table salt, cut the measurement in half (use 1/4 teaspoon instead of 1/2 teaspoon) so you do not oversalt the dish.
  • Science of Tomato Oil: Sun-dried tomatoes contain oil-soluble flavor compounds. Whisking the tomato packing oil directly into the yogurt base extracts these flavors far better than just tossing the tomatoes in at the end.
  • Emulsion Warning: If you are cooking your chicken fresh, let it cool completely to room temperature before mixing. Adding warm chicken to a yogurt-based dressing will split the emulsion and turn your salad into a watery mess.
  • Storage Behavior: After a day in the fridge, the spinach will wilt slightly and release moisture. Give the salad a vigorous stir with a spoon to re-emulsify the dressing before serving.
  • Yogurt Brand Choice: I highly recommend using Fage 5% Greek yogurt. This brand succeeded in all tests, whereas thinner yogurts failed because they released too much whey, turning the salad watery.
