Ingredients

- 1/2 cup plain Greek yogurt
- 1 tbsp fresh lemon juice
- 1 tbsp chopped fresh mint
Directions
- Preheat your oven to 450°F (230°C) with a large cast-iron skillet or baking stone placed on the middle rack.
- In a medium bowl, combine the ground lamb, grated onion, garlic, tomato paste, pepper paste, Diamond Crystal kosher salt, cumin, paprika, and Aleppo pepper.
- Knead the mixture thoroughly with your hands until it forms a smooth, paste-like consistency.
- Divide the meat mixture evenly among your mini flatbreads, using your fingers to press it in a very thin, even layer all the way to the edges.
- Carefully transfer the prepared flatbreads onto the preheated cast-iron skillet or baking stone.
- Bake for 8 to 10 minutes until the meat is cooked through and the edges of the flatbread are golden and crispy.
- While the flatbreads bake, whisk together the Greek yogurt, lemon juice, and chopped mint in a small bowl.
- Drizzle the yogurt sauce over the warm lahmacun bites just before serving.
Notes
- I highly recommend using Diamond Crystal kosher salt; if you only have fine table salt, cut the measurement in half to avoid an over-salted batch.
- Grating the onion and squeezing it through a fine-mesh sieve is crucial because excess water prevents the Maillard reaction, leaving you with steamed meat instead of a beautifully browned, caramelized topping.
- Keep a close eye on the oven during the last two minutes of baking; because these are mini bites, the transition from perfectly crisped to charred and dry happens in a flash.
- Leftovers will lose their signature crunch in the fridge, but you can easily revive them by heating them in a dry skillet over medium heat for 3 minutes.
