Ingredients
- 340 g penne or fusilli pasta
- 60 ml extra virgin olive oil
- 3 cloves garlic, thinly sliced
- 300 g cherry tomatoes, halved
- 150 g high-quality block Greek feta cheese, crumbled
- 50 g kalamata olives, pitted and halved
- 15 g fresh basil leaves, torn
- 1 tablespoon Diamond Crystal kosher salt (for pasta water)
- 0.5 teaspoon freshly cracked black pepper
Directions
- Bring a large pot of water to a rolling boil, then season generously with Diamond Crystal kosher salt.
- Add the pasta and cook until al dente, about 8 to 10 minutes. Reserve 120 ml of starchy pasta water before draining.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the sliced garlic and cook for 1 minute until fragrant but not browned.
- Toss in the cherry tomatoes and cook for 3 to 4 minutes until they begin to blister and release their juices.
- Add the drained pasta, crumbled feta, and halved olives directly to the skillet.
- Pour in half of the reserved pasta water and toss vigorously for 1 to 2 minutes, allowing the starch and fats to emulsify into a glossy sauce.
- Remove from heat, stir in the fresh basil and black pepper, and serve immediately.
Notes
- We highly recommend using Diamond Crystal kosher salt. If you are using fine table salt instead, cut the volume in half (use 1.5 teaspoons of table salt for every 1 tablespoon of Diamond Crystal) to avoid over-salting.
- The starch gelatinization in the reserved pasta water is crucial. It acts as a natural emulsifier, binding the hydrophobic olive oil with the water to form a cohesive sauce.
- Keep a close eye on the garlic in step 3. Thinly sliced garlic burns in a flash, turning bitter and ruining the delicate olive oil base. If it starts to turn dark brown, discard it and start over.
- After a day in the fridge, the pasta will absorb the remaining sauce and dry out slightly. To revive it, reheat with a splash of water and a drizzle of olive oil to rebuild the emulsion.

The microwave heats unevenly, which can cause the olive oil to separate and turn greasy.
