Directions

  1. Bring a large pot of salted water to a rolling boil. Cook the pasta according to package instructions until just al dente. Do not overcook, as the pasta will soften slightly as it marinates in the dressing.
  2. Drain the pasta immediately in a colander. Rinse thoroughly with cold water, tossing the noodles with your hands until they are completely cool to the touch. Let them drain fully.
  3. In a small bowl, whisk together the sour cream, mayonnaise, fresh lime juice, chili powder, ground cumin, garlic powder, Diamond Crystal kosher salt, and cayenne pepper until smooth and emulsified.
  4. In a large mixing bowl, combine the cooled pasta, black beans, sweet corn, diced red bell pepper, halved cherry tomatoes, red onion, and chopped cilantro.
  5. Pour the dressing over the pasta mixture. Use a large spatula to gently fold everything together until every noodle is evenly coated.
  6. Fold in the crumbled cotija cheese. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Notes

  • I highly recommend using Diamond Crystal kosher salt; if you only have fine table salt, cut the measurement in half (use 3/4 tsp instead of 1.5 tsp) to avoid over-salting.
  • Rinsing the pasta is crucial here because it washes away the surface amylose starch. If left on, this starch would absorb the liquid from the dressing, leaving you with a dry, clumpy salad after a few hours in the fridge.
  • Do not mix the cotija cheese into hot pasta. Make sure the noodles are completely cold before assembling, or the cheese will melt into greasy pockets instead of staying as distinct, salty crumbles.
  • After a day in the fridge, the pasta will inevitably absorb some moisture. Tap a splash of cold water or an extra squeeze of lime juice into the bowl and stir vigorously to loosen the dressing back up before serving.
