Ingredients

  • 1 package (12-count) King's Hawaiian sweet rolls
  • 4 tbsp Kerrygold unsalted butter, softened
  • 1.5 cups low-moisture mozzarella cheese, shredded
  • 1.5 cups sharp cheddar cheese, shredded
  • 1/2 tsp Diamond Crystal kosher salt
  • 1/4 tsp garlic powder

Directions

  1. Slice the entire block of Hawaiian rolls horizontally in half, keeping the individual rolls connected so you have one large top slab and one bottom slab.
  2. Spread half of the softened butter evenly across the bottom cut-side of the rolls.
  3. Place the bottom slab of rolls, buttered-side down, into a cold, large cast-iron skillet or griddle.
  4. Mix the shredded mozzarella and sharp cheddar together in a bowl, then pile the cheese mixture evenly over the bottom rolls.
  5. Place the top slab of rolls over the cheese layer.
  6. Melt the remaining butter, stir in the garlic powder and Diamond Crystal kosher salt, and brush this mixture generously over the tops of the rolls.
  7. Place a sheet of parchment paper over the rolls, then weigh them down with a second heavy skillet or a foil-wrapped brick to compress them.
  8. Turn the heat to low and cook for 6 to 8 minutes until the bottom is deeply golden brown, then carefully flip the entire block, replace the weight, and cook for another 5 to 6 minutes until the cheese is completely melted.

Notes

  • I highly recommend Kerrygold butter for brushing the tops; if using Diamond Crystal kosher salt, use 1/2 teaspoon, but scale back to 1/4 teaspoon if using fine table salt.
  • Low-moisture mozzarella is essential here because its tight protein matrix melts smoothly without releasing excess water, which would otherwise make the sweet rolls soggy.
  • Do not walk away from the stove; the high sugar content in Hawaiian rolls means they can transition from perfectly golden to completely charred in under thirty seconds.
  • After a day in the fridge, the bread will lose its crispness, but you can easily revive the crunch by reheating them in a 350°F air fryer for 3 minutes.
