The physics of this is fascinating, but bear with me here: the fundamental issue with baking brie as a centerpiece is thermal mass, meaning it goes from perfectly gooey to a congealed, rubbery disk in less than ten minutes.

Ingredients

  • 4 mini pita breads
  • 150g (5 oz) Brie cheese, sliced (rind left on)
  • 1/2 cup dried cranberries
  • 1/3 cup chopped walnuts
  • 2 tbsp hot honey (for drizzling)
  • 1 tbsp olive oil
  • 1/4 tsp Diamond Crystal kosher salt
  • Fresh thyme leaves (for garnish)

Directions

  1. Preheat your oven to 400°F (200°C) and arrange the mini pitas on a sturdy baking sheet.
  2. Brush each pita lightly with olive oil and sprinkle with a pinch of Diamond Crystal kosher salt.
  3. Toast the chopped walnuts in a dry skillet over medium heat for 3 minutes until fragrant, then set aside.
  4. Top each pita with slices of Brie cheese, distributing them evenly to the edges.
  5. Scatter the dried cranberries and toasted walnuts over the cheese.
  6. Bake for 6 to 8 minutes, or until the Brie is beautifully melted and bubbling at the edges.
  7. Remove from the oven, drizzle immediately with hot honey, and garnish with fresh thyme leaves.

Notes

  • I highly recommend using Diamond Crystal kosher salt; if you only have Morton's or fine table salt, cut the volume in half to avoid over-salting.
  • Do not cut the white rind off the Brie. The rind is completely edible and acts as a structural protein matrix that keeps the cheese from completely liquefying and running off your mini pizzas.
  • Watch the walnuts like a hawk when toasting. Nuts go from perfectly toasted to bitter and burnt in a matter of seconds, so do not walk away from the stove.
  • While these are best served fresh and hot, any leftovers can be stored in an airtight container in the fridge for up to two days. Just note that the walnuts will lose their crispness over time as they absorb moisture from the cheese.
