Moist Banana Bread

This is the ultimate moist banana bread recipe, packed with rich banana flavor and a tender crumb that stays incredibly soft for days.

Moist Banana Bread
Why This Recipe Works:
  • High ratio of mashed bananas to flour ensures a naturally sweet, intensely aromatic crumb.
  • Sour cream introduces lactic acid, which breaks down gluten bonds for an incredibly tender texture.
  • Melted butter provides fat that coats the flour molecules, preventing starch gelatinization from making the loaf gummy.

I still remember the humid Tuesday afternoon in my cramped third-floor apartment when I accidentally melted my plastic mixing bowl on the stove burner while trying to soften butter for a quick bread.

My forearms literally throbbed from hand-mashing five rock-hard, green-tipped bananas with a flimsy metal fork.

It was a total disaster.

Most banana bread recipes fail because they rely on too much flour, which creates a tough gluten network that locks up the moisture.

The simple fix is using overripe, brown-speckled bananas and a splash of sour cream to tenderize the protein matrix.

Ingredients

  • 3 large very ripe bananas, mashed (about 1 1/2 cups)
  • 1/2 cup (113g) unsalted butter, melted and cooled slightly
  • 3/4 cup (150g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/4 cup (60g) sour cream or plain Greek yogurt
  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon Diamond Crystal kosher salt
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Directions

  1. Preheat your oven to 350°F (175°C) and grease an 8.5 x 4.5-inch loaf pan with butter or nonstick spray.
  2. In a large bowl, mash the bananas with a fork or potato masher until smooth with only small chunks remaining.
  3. Whisk the melted butter, granulated sugar, egg, vanilla extract, and sour cream into the mashed bananas until fully combined.
  4. Sift the all-purpose flour, baking soda, and kosher salt directly over the wet ingredients.
  5. Gently fold the dry ingredients into the wet mixture using a rubber spatula just until no flour pockets remain; do not overmix.
  6. Fold in the chopped walnuts or chocolate chips if using, then scrape the batter into the prepared loaf pan.
  7. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

  • We highly recommend using Diamond Crystal kosher salt; if you only have fine table salt, cut the measurement in half to 1/4 teaspoon to avoid an overly salty loaf.
  • Sour cream is our secret weapon because its lactic acid weakens the gluten protein matrix, yielding a cake-like crumb that never turns rubbery.
  • Keep an eye on the oven around the 45-minute mark; if the top is browning too quickly, tent it loosely with aluminum foil to prevent the crust from burning before the center cooks through.
  • After a day in a sealed container, the moisture redistributes, making the bread taste even sweeter and more intensely banana-forward than it did fresh out of the oven.
  • If you want to change up the format, you can easily bake this batter into nutella banana swirl muffins or try making chewy banana bread cookies for a portable treat.
  • For an ultra-rich variation, check out our cream cheese banana bread which features a decadent cream cheese ribbon.
  • If you are craving something chocolatey, these banana bread brownies are the ultimate hybrid dessert.

Serving Suggestions

This loaf is spectacular on its own, but you can easily elevate your morning routine with a few simple pairings.

  • Slathered with salted butter or a smear of cream cheese.
  • Toasted lightly and drizzled with warm honey or maple syrup.
  • Served alongside a hot cup of coffee or a cold glass of milk.
  • Topped with a spoonful of almond butter or peanut butter for extra protein.
  • Used as the base for an decadent banana bread French toast.

Storage and Reheating

Let's talk storage.

Keep this loaf in an airtight container at room temperature for up to four days. Wrapping it tightly in plastic wrap before putting it in the container prevents the edges from drying out.

If you want to keep it longer, slice the loaf first and freeze the individual slices on a baking sheet. Once frozen, transfer them to a zip-top bag for up to three months.

To reheat, simply pop a frozen slice directly into the toaster or warm it in the microwave for twenty seconds. It will taste exactly like it was baked this morning.

Ingredient Substitutes

If you are missing an ingredient, here are the best swaps that won't ruin your loaf.

  1. Sour Cream: You can substitute plain Greek yogurt or full-fat buttermilk in an equal 1:1 ratio.
  2. Granulated Sugar: Sub in coconut sugar or light brown sugar for a deeper, caramel-like flavor profile.
  3. Unsalted Butter: Use coconut oil or a neutral vegetable oil if you need a dairy-free fat option.
  4. All-Purpose Flour: A 1:1 gluten-free baking flour blend works beautifully here without making the bread gummy.

I hope this loaf brings as much warmth to your kitchen as it does to mine. Let me know in the comments if you added chocolate chips, walnuts, or kept it beautifully classic!
