Ingredients
- 3 cups (360g) all-purpose flour
- 2 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp Diamond Crystal kosher salt
- 1 cup (225g) unsalted butter, softened
- 1 3/4 cups (350g) granulated sugar
- 4 large eggs, room temperature
- 1 tbsp pure vanilla extract
- 1 1/4 cups (300ml) whole milk, room temperature
- 3 tbsp Dutch-process cocoa powder (bloomed in 2 tbsp hot water)
- 1/3 cup freeze-dried strawberry powder
- 1-2 drops pink gel food coloring (optional)
- 1 1/2 cups (340g) unsalted butter, softened (for frosting)
- 4 cups (500g) powdered sugar (for frosting)
- 3 tbsp heavy cream (for frosting)
- 1 tbsp pure vanilla extract (for frosting)
Directions
- Preheat your oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and kosher salt. Set aside.
- In a stand mixer fitted with the paddle attachment, cream the softened butter and granulated sugar on medium-high speed for 4 minutes until light and fluffy.
- Add the eggs one at a time, beating well after each addition, then scrape down the bowl and mix in the vanilla extract.
- With the mixer on low, alternate adding the flour mixture and the whole milk in three batches, starting and ending with the flour, mixing just until combined.
- Divide the batter evenly into three separate bowls (about 1 1/2 cups of batter per bowl).
- Leave the first bowl plain (Vanilla). In the second bowl, fold in the bloomed cocoa powder paste until uniform (Chocolate). In the third bowl, fold in the freeze-dried strawberry powder and gel coloring (Strawberry).
- Spread each flavored batter into its prepared pan, smoothing the tops with an offset spatula.
- Bake for 25 to 30 minutes, or until a toothpick inserted into the center of each layer comes out clean. Cool completely on wire racks.
- To make the buttercream, beat the butter for 3 minutes until creamy, then gradually add powdered sugar, heavy cream, vanilla, and salt, beating on high until light and fluffy.
- Assemble the cake by placing the chocolate layer on a plate, spreading a layer of buttercream, topping with the strawberry layer, more buttercream, and finally the vanilla layer. Frost the outside of the cake with the remaining buttercream. </
Notes
- We highly recommend using Diamond Crystal kosher salt. If you are using fine table salt, cut the volume in half (use 1/2 teaspoon instead of 1 teaspoon) to prevent an overly salty cake.
- Blooming the Dutch-process cocoa powder in hot water is essential. The hot liquid dissolves the fat-resistant solids in the cocoa, allowing the oil-soluble flavor compounds to fully release into the batter for a richer chocolate taste.
- Keep a close eye on the strawberry layer during the final minutes of baking. Because of the natural sugars in the freeze-dried strawberry powder, this layer tends to brown slightly faster than the vanilla layer; tent it loosely with foil if it colors too quickly.
- After a day in the fridge, the crumb of this cake actually tightens and becomes beautifully fudgy. Always let sliced portions sit at room temperature for 20 minutes before serving so the butter-rich crumb can soften back to its pillowy glory.
- Ensure your eggs and milk are truly at room temperature. Cold ingredients will emulsify poorly with the creamed butter, causing the batter to split and resulting in a dense, uneven bake.

This cake keeps beautifully when stored correctly. Wrap the entire cake, or individual slices, tightly in plastic wrap to prevent the refrigerator's dry air from robbing the crumb of its moisture. It will easily last in the fridge for up to five days.
If you want to freeze it, I recommend flash-freezing individual slices on a baking sheet for an hour first.
Once the buttercream is firm to the touch, wrap each slice in a double layer of plastic wrap followed by aluminum foil. They will stay fresh in the freezer for up to three months, ready for any sudden cake emergency.
To serve, simply thaw a slice on the counter for about 30 minutes until it reaches room temperature.
Ingredient Substitutes
