Ingredients

  • 1 cup graham cracker crumbs (about 8 full sheets)

  • 1 cup heavy whipping cream, cold
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 cup whole milk, cold
  • 2 large ripe bananas, sliced
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon Diamond Crystal kosher salt

Directions

  1. In a medium bowl, stir together the graham cracker crumbs, melted butter, and granulated sugar until the mixture resembles wet sand. Press the mixture firmly into the bottoms of 6 mini dessert cups or ramekins using the back of a spoon.
  2. In a large bowl, beat the softened cream cheese, powdered sugar, vanilla extract, and kosher salt with a hand mixer on medium speed until completely smooth and free of lumps.
  3. In a separate chilled bowl, whip the heavy cream until stiff peaks form. Gently fold half of the whipped cream into the cream cheese mixture to lighten it, reserving the remaining whipped cream for the topping.
  4. In another bowl, whisk together the instant vanilla pudding mix and cold whole milk for 2 minutes until it begins to thicken. Fold the thickened pudding into the cream cheese mixture until fully combined and smooth.
  5. Toss the sliced bananas with the fresh lemon juice in a small bowl to prevent oxidation.
  6. Layer a few banana slices over the graham cracker crusts, spoon or pipe the cream filling on top, and garnish with the remaining whipped cream and banana slices. Chill in the refrigerator for at least 1 hour before serving.

Notes

  • I highly recommend using Diamond Crystal kosher salt (use 1/4 teaspoon, or half that if using Morton's) to balance the sweetness of the pudding and cream.
  • The lactic acid in the cream cheese doesn't just add tang; it physically tightens the dairy proteins, creating a stabilized emulsion that won't collapse like plain whipped cream.
  • Do not use warm or room temperature milk for the instant pudding. The starch in instant pudding relies on cold liquid to hydrate slowly; warm milk will cause instant clumping and ruin the texture.
  • After 24 hours in the fridge, the graham cracker crust will naturally soften as it absorbs moisture from the filling, transforming from crunchy to a delightful cake-like texture.
