This easy No Bake Orange Creamsicle Cheesecake features a buttery graham cracker crust filled with a velvety, citrus-infused cream cheese filling that tastes exactly like the classic summer ice cream bar.

No Bake Orange Creamsicle Cheesecake
Why This Recipe Works:
  • Reducing the orange juice concentrates the natural sugars and bright citrus flavor without adding excess water that would ruin the cheesecake's structure.
  • Fresh orange zest contains essential oils that provide a punchy, authentic citrus aroma that juice alone cannot replicate.
  • Using heavy whipping cream instead of gelatin keeps the texture incredibly light, airy, and melt-in-your-mouth soft.

I still remember the sticky July afternoon my sister and I sat on the curb, racing to lick melting orange-and-vanilla ice cream bars before they ran down our wrists. That exact flavor memory is what I wanted to capture in a sliceable dessert.

But getting it right was a mess.

My first three attempts at a no-bake orange filling turned into a soupy, curdled disaster because I kept adding fresh orange juice directly to the cream cheese. The citric acid in the juice completely wrecked the protein matrix of the dairy, causing it to separate into a watery mess that looked like wet plaster. I actually cried over the third batch when it slid right off the graham cracker crust, wishing I had stuck to my foolproof Strawberry Pretzel Salad instead.

I learned this the hard way so you do not have to.

The simple fix is using a combination of fresh orange zest for those oil-soluble flavor compounds and a concentrated reduction of orange juice.

It works like magic.

Now, you just fold this vibrant orange syrup into a velvety cream cheese base lightened with whipped heavy cream. Unlike a traditional baked Vanilla Cheesecake, this requires zero oven time.

Avoid generic store-brand cream cheese here. They contain too many stabilizers, which makes the filling gummy instead of velvety.

It is absolutely perfect.

Ingredients

  • 2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp unsalted butter, melted
  • 1 cup fresh orange juice
  • 16 oz cream cheese, softened (two 8-ounce blocks)
  • 1 cup powdered sugar
  • 1 tbsp fresh orange zest
  • 1 tsp pure vanilla extract
  • 1/4 tsp Diamond Crystal kosher salt
  • 1 1/4 cups heavy whipping cream, cold

Directions

  1. In a small saucepan over medium heat, simmer the fresh orange juice until it reduces to exactly 1/4 cup of concentrated syrup. Pour it into a small bowl and let it cool completely to room temperature.
  2. In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.
  3. Press the crumb mixture firmly into the bottom and slightly up the sides of a 9-inch springform pan. Place the pan in the freezer to set while you prepare the filling.
  4. In a chilled bowl, beat the cold heavy whipping cream until stiff peaks form. Set aside in the refrigerator.
  5. In a separate large bowl, beat the softened cream cheese and powdered sugar together until completely smooth and free of lumps.
  6. Add the cooled orange juice reduction, fresh orange zest, vanilla extract, and kosher salt to the cream cheese mixture. Beat on medium speed until fully incorporated and fluffy.
  7. Gently fold the whipped cream into the orange cream cheese mixture using a rubber spatula until no white streaks remain.
  8. Spread the filling evenly over the prepared graham cracker crust. Cover with plastic wrap and refrigerate for at least 6 hours, or preferably overnight, until firm before slicing.

Notes

  • I highly recommend using Diamond Crystal kosher salt. If you only have fine table salt, use exactly half the amount (1/8 teaspoon instead of 1/4 teaspoon) to avoid an overly salty filling.
  • Do not skip reducing the orange juice. Boiling it down drives off excess water, which prevents the citric acid from breaking down the protein matrix of the cream cheese and causing the filling to curdle.
  • Keep a close eye on the orange juice as it reduces. In the last few minutes, it can quickly burn and turn bitter, so swirl the pan frequently and remove it from the heat the moment it hits the 1/4 cup mark.
  • After 24 hours in the fridge, the crust will soften slightly as it absorbs moisture from the filling, but the orange flavor actually deepens and becomes more pronounced.
  • Make sure your cream cheese is truly at room temperature before beating. Cold cream cheese will result in tiny, stubborn lumps that ruin the velvety texture.

Serving Suggestions

To make this dessert look as spectacular as it tastes, I love adding a few simple garnishes right before slicing. These quick additions bring a beautiful pop of color and texture to every plate.

  • Fresh orange slices cut into thin wheels or triangles and arranged on top
  • A generous dollop of extra whipped cream piped around the border of the cake
  • Finely grated orange zest sprinkled over the top for a vibrant citrus aroma
  • A few fresh mint leaves tucked next to the orange slices for a beautiful contrast
  • Crushed vanilla wafer cookies sprinkled along the edge for extra crunch

Storage and Reheating

This cheesecake lives its best life in the refrigerator. Keep it tightly covered with plastic wrap or stored in an airtight cake carrier to prevent it from absorbing any stray fridge odors.

It will stay perfectly fresh and sliceable for up to five days. In fact, I think the citrus flavor melds together even better on day two.

Do not freeze this.

While you can technically freeze it, the thawing process causes the whipped cream to lose its structure. You will end up with a slightly watery, weeping texture that ruins the velvety mouthfeel.

Always slice it straight from the fridge using a warm, sharp knife. Wipe the blade clean between each cut for those picture-perfect, clean bakery slices.

Ingredient Substitutes

If you need to swap a few things based on what is in your pantry, here are the easiest conversions:

  1. Graham Crackers: Swap with vanilla wafers or golden Oreos for an even sweeter, cake-like crust.
  2. Oranges: You can use tangerines or clementines instead of standard navel oranges for a slightly sweeter citrus profile.
  3. Heavy Cream: If you are in a pinch, you can use thawed whipped topping (like Cool Whip), but reduce the powdered sugar by half since whipped topping is already sweetened.

This is the ultimate summer dessert to share with friends, and I promise everyone will be begging for the recipe. If you are a fan of easy, chilled desserts, you should also try this No Bake Banana Pudding Cheesecake. Let me know how yours turns out in the comments below!
