  • The science behind the chilling step is crucial: the saturated fats in the cream cheese must recrystallize in the refrigerator to create a firm, sliceable texture without the need for gelatin.
  • Do not rush the thawing of your whipped topping in the microwave; if it melts into a liquid, it will ruin the emulsion of the cream layer, so thaw it slowly in the fridge overnight instead.
  • After 24 hours in the fridge, the graham cracker crust will soften slightly as it absorbs moisture from the filling, making it taste even more like a cohesive icebox cake.
