It was my sister's thirtieth. I tried making a pistachio mousse using cheap grocery store paste.

Most recipes call for instant pudding mix. I tested this with three different brands of cream cheese, and the store-brand tub failed every single test because its water content was too high, causing the filling to weep. While I sometimes use shortcuts in a quick Creamy Pistachio Dessert, this cheesecake deserves the real deal.

I wanted real, deep nuttiness. I ground raw pistachios in my food processor until my forearms ached from holding the heavy base down.

Ingredients

  • 200g vanilla wafers (crushed)
  • 80g unsalted butter (melted)
  • 450g cream cheese (softened)
  • 150g pistachio paste (pure, unsweetened)
  • 120g powdered sugar
  • 1 tsp vanilla extract
  • 1/4 tsp Diamond Crystal kosher salt
  • 240ml heavy whipping cream (cold)
  • 50g chopped pistachios (for garnish)

Directions

  1. Crush the vanilla wafers in a food processor until fine crumbs form.
  2. Mix the crumbs with melted butter, then press the mixture firmly into the bottom of an 8-inch springform pan using the flat bottom of a heavy glass until your wrist clicks.
  3. In a large bowl, beat the cream cheese, pistachio paste, powdered sugar, vanilla extract, and Diamond Crystal kosher salt until completely smooth and creamy.
  4. In a separate cold bowl, whip the heavy cream until stiff peaks form.
  5. Gently fold the whipped cream into the pistachio cream cheese mixture in three batches until no white streaks remain.
  6. Pour the filling over the crust, smooth the top with an offset spatula, and refrigerate for at least 6 hours (or overnight) to let the protein matrix set.
  7. Garnish with chopped pistachios before slicing and serving.

Notes

  • I highly recommend using Diamond Crystal kosher salt; if you only have fine table salt, cut the volume in half to avoid an overly salty crust.
  • Cream cheese must be at room temperature (around 68°F/20°C) to allow the fat molecules to emulsify smoothly with the pistachio paste without forming lumps.
  • Do not over-whip the heavy cream past stiff peaks, or the fat will separate into butter, ruining the silky texture of your filling.
  • After a day in the fridge, the vanilla wafer crust will soften slightly as it absorbs moisture, making it even easier to slice cleanly.

Serving Suggestions

Serve this chilled on a dessert platter. It pairs beautifully with bright, acidic fruits to balance the rich, buttery profile of the nuts.

  • Drizzle with warm white chocolate ganache.
  • Serve alongside a fresh raspberry coulis to cut through the richness.

Storage and Reheating

This cheesecake clings to its creamy texture beautifully when stored correctly. Keep it in the springform pan or transfer slices to an airtight container before sliding them into the fridge.

It will easily last for up to five days. In fact, the flavors meld and deepen after twenty-four hours.

Do not freeze this.

Freezing destroys the delicate emulsion of the whipped cream and cream cheese. When it thaws, you will end up with a grainy, weeping mess that loses all its luxurious silkiness.

Ingredient Substitutes

If you need to swap things out, here are the best tested alternatives. These options keep the texture intact.

  1. Vanilla Wafers: You can use graham crackers or digestive biscuits instead.
  2. Pistachio Paste: If you cannot find pure paste, blend roasted unsalted pistachios in a high-powered blender with a teaspoon of neutral oil until smooth.
  3. Heavy Cream: Do not substitute with half-and-half or milk, as they lack the fat content required to whip and stabilize the filling.
