  • 120ml concentrated watermelon juice (reduced from 360ml fresh juice)
  • 10g unflavored gelatin powder (bloomed in 45ml cold water)
  • 5ml fresh lime juice
  • 180ml fresh watermelon juice (for the optional jelly topping)
  • 30g granulated sugar (for the optional jelly topping)
  • 5g unflavored gelatin powder (bloomed in 15ml cold water, for the optional jelly topping)

Directions

  1. Combine graham cracker crumbs, melted butter, sugar, and salt in a bowl. Press the mixture firmly into the bottom of an 8-inch springform pan using your knuckles until your thumbs ache, ensuring an even, compact layer. Freeze for 15 minutes.
  2. In a small saucepan over medium heat, simmer 360ml of fresh watermelon juice until it reduces to exactly 120ml. Let it cool completely to room temperature.
  3. Sprinkle 10g of gelatin powder over 45ml of cold water in a small bowl. Let it sit for 5 minutes to bloom, then microwave for 15 seconds until completely melted and clear.
  4. In a cold bowl, whip the heavy cream to stiff peaks. Set aside in the fridge.
  5. Beat the softened cream cheese and powdered sugar until smooth and free of lumps. Slowly pour in the cooled watermelon concentrate, lime juice, and melted gelatin, mixing constantly to prevent gelatin threads from forming.
  6. Gently fold the whipped cream into the cream cheese mixture using a rubber spatula. Pour the filling over the chilled crust and smooth the top. Refrigerate for at least 4 hours.

Notes

  • Use Philadelphia brand brick cream cheese (not the tub spread) for the ideal fat-to-water ratio. If using Diamond Crystal kosher salt, use 1 gram; if using Morton's, cut that amount in half.
  • Gelatin requires blooming in cold liquid first to allow the protein granules to hydrate and swell. Heating it gently afterward melts the crystals, ensuring it disperses evenly without leaving rubbery lumps in your silky filling.
  • Do not add the gelatin mixture while it is hot, or when the watermelon concentrate is still warm. If you do, it will melt the fat in the cream cheese, causing the batter to break and turn grainy.
