Directions

  1. Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  2. In a large bowl, mash the bananas with a fork until mostly smooth but with a few small chunks remaining.
  3. Whisk in the melted butter, granulated sugar, brown sugar, egg, sour cream, and vanilla extract until fully combined.
  4. In a separate bowl, whisk together the flour, baking soda, and kosher salt.
  5. Gently fold the dry ingredients into the wet ingredients using a silicone spatula just until no flour pockets remain.
  6. Divide the batter evenly among the 12 muffin cups.
